  1. To prepare:
  2. - Preheat the oven to 350F.
  3. - Line a 9x5 inch baking pan with parchment paper or grease the insides using a little vegetable shortening.
  4. - In a mixing bowl, whip the oil, milk, apple cider vinegar, water and vanilla essence together until they are well mixed.
  5. - Add the sugar and mashed bananas to the mix and stir well so that they incorporate the mix.
  6. - In a separate bowl, mix the baking soda, baking powder, oat flour, wheat flour, flax seed powder and cinnamon.
  7. - Add the dry ingredients to the mashed banana mix and stir all the ingredients well so that there are no lumps in the mix.
  8. - Add the chocolate chips and slivered nuts and stir once.
  9. - Pour the batter in the greased pan and smooth the tops. If you like chocolate then you can sprinkle a handful of chocolate chips on the top.
  10. - Bake in the preheated oven for about 1 hour and 20 minutes.
  11. - Let the bread cool overnight before cutting in slices to serve.
  12. To prepare:
  13. - Add the diced strawberries along with the mashed bananas and the lemon rind.
  14. - Mix well and pour the batter in the greased pan.
  15. - Decorate with sliced strawberries.
  16. - Bake on 350F for about 30 minutes.
  17. - Remove and cover with silver foil and bake again for 30 minutes at 320F.
  18. - Remove and cool before serving.
  19. The banana bread is moist and can be stored for up to 2 weeks in the fridge.
