,%20and%20I%20am%20a%20firm%20believer%20that%20there%20is%20more%20to%20love%20about%20cookbooks%20than%20just%20recipes.%3C/p%3E%3Cp%3EThis%20book%20more%20than%20rewards%20on%20that%20level.%20The%20writing%20is%20informal%20and%20very%20entertaining.%20I%20cheerfully%20read%20all%20about%20preserving%20meat%20and%20vegetables,%20and%20found%20it%20very%20entertaining%E2%80%93and%20more%20than%20one%20recipe%20has%20been%20bookmarked.%20I%20was%20even%20inspired%20to%20take%20a%20picture%20of%20one%20page%20and%20send%20it%20to%20my%20mother!%20We%20had%20dined%20at%20a%20very%20exclusive,%20expensive%20and%20well%20regarded%20Spanish%20tapas%20bar%20a%20few%20month%20ago,%20and%20we%20were%20both%20horrified%20to%20be%20served%20mushy%20(probably%20canned)%20white%20asparagus.%20I%20love%20(fresh)%20asparagus,%20and%20was%20intrigued%20to%20see%20what%20Weiss%20did%20with%20it.%20The%20dish,%20topped%20with%20a%20fried%20egg,%20almond-bread%20crumbs%20and%20grated%20preserved%20tuna%20called%20mojama,%20looks%20fantastic%20and%20if%20I%20can%20figure%20out%20the%20tuna%20part%20I%20will%20try%20it.%20But%20anyway,%20in%20the%20headnotes,%20one%20of%20the%20first%20things%20he%20says%20is%3C/p%3E%3Cp%3EFor%20this%20recipe,%20any%20type%20of%20asparagus%20works%20well%20except%20for%20that%20insipid%20canned%20garbage%20the%20Spaniards%20love%20so%20much%20for%20some%20reason%E2%80%A6.%20I%E2%80%99ll%20stick%20to%20the%20fresh%20stuff,%20gracias%E2%80%A6.%3C/p%3E%3Cp%3EPerhaps%20you%20needed%20to%20have%20been%20at%20that%20dinner%20with%20my%20mom,%20but%20this%20just%20cracked%20me%20up.%20And%20reassured%20me%20that%20one%20can%20love%20Spanish%20cuisine%20without%20loving%20mushy%20asparagus!%3C/p%3E%3Cp%3EThis%20kind%20of%20irreverent%20reverence%20pervades%20Weiss%E2%80%99s%20book.%20He%20knows%20his%20Spanish%20charcuter%C3%ADa%20and%20clearly%20loves%20it%20as%20well.%20He%20also%20knows%20what%20he%20likes%20and%20is%20not%20afraid%20to%20disagree%20with%20tradition,%20as%20in%20the%20case%20of%20the%20asparagus%20(he%20does%20note%20that%20the%20asparagus%20growing%20season%20in%20Spain%20is%20traditionally%20short,%20thus%20leading%20to%20an%20appreciation%20of%20canned%20asparagus).%20I%20am%20hoping%20he%20would%20therefore%20understand%20what%20I%20did%20to%20his%20cookie%20recipe.%3C/p%3E%3Cp%3EAnd%20yes,%20surprisingly%20but%20delightfully,%20the%20book%20does%20include%20desserts%20(which%20was%20a%20relief,%20I%20won%E2%80%99t%20lie,%20because%20all%20of%20my%20unexpected%20medical%20issues%20made%20big%20food%20projects%20a%20little%20unappealing).%3C/p%3E%3Cp%3EI%20was%20instantly%20attracted%20to%20these%20cookies,%20Perunillas,%20as%20they%20are%20a%20lard%20based%20cookie.%20I%20had%20fallen%20in%20love%20with%20a%20similar%20Spanish%20cookie%20several%20years%20ago%20in%20the%20form%20of%20these%20Spanish%20tender%20cookies,%20probably%20another%20version%20of%20Perunillas,%20although%20not%20identical.%20Then,%20as%20now,%20I%20was%20wary%20of%20the%20cinnamon%20and%20lemon%20combination.%20Unlike%20then,%20I%20went%20ahead%20and%20tried%20the%20recipe%20as%20written,%20flavored%20with%20lemon,%20cinnamon%20and%20anise%20flavored%20liquor.%3C/p%3E%3Cp%3ENone%20of%20us%20cared%20for%20them.%20I%20adored%20the%20texture,%20but%20there%20is%20something%20about%20lemon%20and%20cinnamon%20together%20which%20just%20does%20not%20appeal%20to%20me,%20and%20apparently%20not%20to%20my%20family%20either.%20So%20Alex%20and%20I%20sat%20down%20and%20re-worked%20the%20flavors%20to%20our%20taste,%20and%20the%20whole%20family%20adored%20them.%20Crumbly,%20tender,%20a%20little%20flaky,%20Alex%20and%20I%20had%20a%20blast%20making%20these.%20We%20sprinkled%20some%20with%20tiny%20pearl%20sugar%20and%20some%20with%20colorful%20coarse%20sugar.%3C/p%3E%3Cp%3EVanilla%20Citrus%20Perunillas%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%20Cuisine:%20Cookies,%20Spanish%3C/p%3E%3Cp%3E28%20oz%20(800%20g)%20AP%20flour%201%20T%20kosher%20salt%201%20T%20baking%20powder%2014%20oz%20(400%20g)%20manteca%20(pork%20lard,%20preferably%20fresh%20and%20roasty,%20UNprocessed)%2010%C2%BD%20oz%20(300%20g)%20sugar%204%20large%20egg%20yolks%20(reserve%20whites)%20%C2%BC%20cup%20Tuaca%20liquor%20zest%20and%20juice%20of%201%20lime%201%20heaping%20t%20vanilla%20paste%201%20t%20fiori%20di%20sicilia%20coarse%20sugar%20(sanding%20sugar%20or%20pearls)%20for%20sprinkling%20egg%20white%20for%20brushing%20onto%20cookies%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20F.%20Line%202%20baking%20sheets%20with%20parchment%20or%20silicone%20mats.%20Set%20aside.%20Whisk%20together%20the%20flour,%20salt%20and%20baking%20powder.%20Set%20aside.%20Beat%20the%20lard%20until%20softened%20and%20creamy.%20Add%20the%20sugar%20in%203%20increments,%20beating%20until%20fluffy.%20Add%20the%20egg%20yolks,%20one%20at%20a%20time,%20beating%20to%20incorporate.%20Scrape%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20necessary.%20Beat%20in%20the%20Tuaca,%20lime%2
