Vanilla Cheesecake with a Simple Topping

%3C/p%3E%3Cp%3EThis%20year%20I%20decided%20to%20have%20something%20a%20little%20bit%20different%20and%20made%20myself%20a%20cheesecake.%20Well,%20i%20did%20share%20it%20with%20Todd,%20I%20confess%20.%20.%20.%20I'm%20not%20that%20greedy!%20I%20think%20even%20I%20would%20have%20a%20difficult%20time%20eating%20a%20cheesecake%20all%20by%20myself,%20but%20I%20do%20think%20I%20could%20give%20it%20a%20good%20go!%20(We%20won't%20go%20there%20.%20.%20.%20)%3C/p%3E%3Cp%3EAnyways,%20I%20have%20this%20lovely%20little%20book%20called%20%22Easy%20Desserts%22%20deliciously%20indulgent%20treats.%20It's%20published%20by%20Murdoch%20Books%20and%20is%20a%20compilation%20of%20a%20variety%20of%20dessert%20recipes%20created%20by%20different%20chef%20peoples.%20On%20the%20back%20cover%20it%20says%20.%20.%20.%20%22No-fuss%20recipes%20for%20irresistible%20desserts%20that%20are%20guaranteed%20to%20bring%20a%20smile%20to%20everyone's%20face.%22%20I%20can%20attest%20to%20the%20truth%20of%20that%20statement.%20I've%20made%20quite%20a%20few%20recipes%20from%20the%20whole%20%20of%20the%20%22easy%22%20books%20series%20and%20they%20are%20all%20good,%20and%20.%20.%20.%20as%20one%20would%20expect%20from%20their%20titles%20.%20.%20.%20easy.%3C/p%3E%3Cp%3EI%20converted%20the%20measurements%20fo%20North%20American%20for%20my%20North%20American%20Friends%20and%20left%20out%20her%20cooked%20blueberry%20topping%20completely.%20Those%20are%20my%20changes.%3C/p%3E%3Cp%3EThe%20cake%20itself%20is%20rich%20and%20yes%20.%20.%20.%20indulgent,%20with%20a%20creamy%20cheese%20filling%20topped%20with%20an%20even%20creamier%20sour%20cream/yoghurt%20topping.%3C/p%3E%3Cp%3EThe%20blueberry%20topping????%20Well,%20it's%20just%20the%20icing%20on%20a%20very%20delicous%20and%20moreish%20dessert.%20Do%20make%20sure%20you%20chill%20this%20properly%20before%20cutting%20and%20do%20use%20a%20wet%20and%20very%20sharp%20knife%20to%20cut.%20You%20will%20have%20no%20problems%20getting%20perfect%20slices%20if%20you%20follow%20those%20two%20pieces%20of%20advice%20.%20.%20.%20oh,%20and%20line%20the%20pan%20leaving%20some%20handles%20for%20lifting%20the%20ice%20cold%20cheesecake%20out%20of%20the%20pan.%20I%20find%20this%20works%20much%20better%20than%20using%20a%20springform%20pan%20.%20.%20.%3C/p%3E%3Cp%3EOh,%20and%20a%20square%20pan%20makes%20for%20nice%20even%20slices%20that%20look%20very%20pretty%20on%20the%20plate.%20I%20think%20so%20anyways.%20Enjoy!%20I%20did!%20(I%20am%20soooo%20not%20looking%20forward%20to%20my%20weigh%20-in%20this%20week!)%3C/p%3E%3Cp%3E*Vanilla%20Cheesecake%20with%20a%20Simple%20Topping*%3C/p%3E%3Cp%3EServes%208%20to%2010%3C/p%3E%3Cp%3ELush%20and%20delicious.%20I%20top%20mine%20with%20a%20mixture%20of%20blueberry%20jam%20and%20honey,%20but%20you%20could%20use%20any%20jam%20you%20like.%20It%20makes%20an%20easy%20topping.%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20190*C/375*F/%20gas%20mark%205.%20Have%20ready%20an%209%20inch%20square%20baking%20tin.%20Butter%20it%20well.%20Line%20it%20with%20some%20baking%20parchment,%20leaving%20an%20overhang,%20and%20then%20butter%20the%20baking%20parchment.%3C/p%3E%3Cp%3ESet%20aside.%3C/p%3E%3Cp%3EMelt%20the%20butter,%20cool%20slightly%20and%20then%20stir%20in%20the%20crushed%20biscuits.%20Press%20evenly%20and%20firmly%20into%20the%20base%20of%20the%20pan.%3C/p%3E%3Cp%3EBeat%20all%20of%20the%20ingredients%20for%20the%20first%20layer%20together,%20making%20sure%20they%20are%20completely%20mixed%20and%20smooth.%20Pour%20over%20the%20biscuit%20base.%20Smooth%20over%20the%20top.%20Place%20onto%20a%20baking%20tray%20and%20then%20bake%20it%20in%20the%20preheated%20oven%20for%2020%20minutes,%20until%20just%20set.%20Remove%20from%20the%20oven%20and%20set%20aside%20for%20a%20further%2020%20minutes%20in%20order%20to%20let%20it%20set%20up.%3C/p%3E%3Cp%3EWhisk%20together%20the%20ingredients%20for%20the%20second%20layer,%20until%20smooth%20and%20completely%20combined.%20Spoon%20this%20mixture%20evenly%20over%20top%20of%20the%20first%20layer.%20Return%20to%20the%20oven%20and%20bake%20for%20a%20further%2010%20minutes.%20Allow%20to%20cool%20completely.%20Place%20in%20the%20refrigerator%20to%20chill%20overnight.%3C/p%3E%3Cp%3EThe%20next%20day,%20gently%20warm%20the%20blueberry%20jam.%20Stir%20in%20the%20honey.%20Set%20aside%20to%20cool%20somewhat.%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20serve%20the%20cake.%20Gently%20loosen%20the%20edges%20with%20a%20sharp%20knife%20and%20lift%20the%20cake%20out%20onto%20a%20cutting%20board.%20Wet%20the%20knife%20and%20carefully%20cut%20into%208%20or%2010%20narrow%20slices.%20Place%20each%20onto%20a%20chilled%20plate%20and%20then%20spoon%20some%20of%20the%20blueberry%20sauce%20over%20top.%20Serve.%3C/p%3E%3Cp%3ENote:%20You%20don't%20need%20to%20use%20blueberry%20jam%20for%20the%20topping.%20Strawberry,%20Raspberry,%20Cherry%20and%20Apricot%20are%20each%20also%20VERY%20good!%3C/p%3E%3Cp%3EThe%20Toddster%20cooked%20me%20dinner%20and%20did%20a%20pretty%20good%20job.%20I%20think%20he%20had%20some%20help%20from%20M&S,%20but%20that's%20ok.%20I%20enjoyed%20it%20anyways,%20and%20I%20appreciated%20the%20effort%20he%20took%20.%20.%20.%20not%20to%20mention%20the%20thought.%3C/p%3E){kind=link}

Don't just leave it with blueberry Veronica. Try apricot, peach, cherry . . . plum . . . whatever jam hits your fancy. Easy peasy and oh sooooo delish!Этот рецепт был приготовлен/опробован мной!
