%20and%20Caroline,%20who%20very%20kindly%20gave%20me%20the%20recipe%20that%20you%20see%20below%20have%20both%20inspired%20me%20to%20have%20a%20go%20at%20making%20cupcakes.%20%20Having%20a%20go%20at%20making%20cupcakes%20also%20formed%20part%20of%20my%20foodie%20New%20Year%20resolutions.%3C/p%3E%3Cp%3EUltra%20Simple%20Vanilla%20Cupcakes%20(adapted%20from%20Fair%20Cake%20and%20given%20to%20me%20by%20Caroline.%20Original%20recipe%20is%20here)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EPreheat%20oven%20to%20150C%20Fan%20or%20160C%20otherwise.%3C/p%3E%3Cp%3EEnsure%20that%20the%20butter%20is%20very%20soft.%20You%20can%20either%20leave%20the%20butter%20out%20of%20the%20fridge%20overnight,%20or%20zap%20it%2020%20seconds%20at%20a%20time%20in%20a%20microwave.%20The%20butter%20should%20be%20as%20soft%20as%20possible%20without%20melting.%3C/p%3E%3Cp%3EPut%20all%20measured%20ingredients%20in%20a%20kitchen%20mixer%20fitted%20with%20a%20paddle%20attachment%20and%20mix%20until%20light%20and%20fluffy.%20If%20you%20do%20not%20have%20a%20kitchen%20mixer,%20put%20all%20measured%20ingredients%20in%20a%20large%20bowl%20and%20mix%20with%20a%20wooden%20spoon,%20briskly,%20until%20your%20arms%20ache.%20Around%20one%20minute.%3C/p%3E%3Cp%3EDon%E2%80%99t%20mix%20it%20for%20more%20than%20a%20minute%20or%20so.%20Then%20you%20will%20be%20in%20trouble%20and%20there%20will%3C/p%3E%3Cp%3Ebe%20a%20slight%20risk%20of%20the%20cupcakes%20baking%20into%20tough%20little%20rebels.%20The%20consistency%20of%20the%20mixture%3C/p%3E%3Cp%3Eshould%20be%20a%20bit%20like%20heavy%20custard%20and%20it%20should%20plop%20nicely%20from%20a%20spoon.%20This%20mixture%20is%20enough%20for%20about%2024%20cupcakes,%20depending%20on%20the%20size%20of%20your%20cupcake%20liners.%20Fill%20cupcake%20liners%20between%20%C2%BD%20and%20%C2%BE%20the%20way%20up.%20Fill%20%C2%BD%20way%20up%20to%20get%20an%20even%20flat%20shape,%20fill%20%C2%BE%20way%20up%20to%20get%20a%20nice%20dome%20shape.%20Use%20a%20muffin%20pan,%20otherwise%20the%20liners%20spread%20into%20ghastly%20shapes.%3C/p%3E%3Cp%3EBake%20for%2020%20minutes%20in%20the%20middle%20of%20the%20oven,%20but%20check%20after%2015%20by%20inserting%20a%20little%20cocktail%20stick.%20If%20there%20is%20anything%20stuck%20to%20the%20stick,%20then%20bake%20for%20the%20full%2020%20minutes.%20Let%20the%20cupcakes%20cool%20in%20the%20pan%20for%20around%205%20minutes%20and%20then%20take%20them%20out%20carefully%20and%20allow%20to%20cool%20outside%20the%20pan.%20Let%20cupcakes%20cool%20completely%20before%20icing.%3C/p%3E%3Cp%3EVanilla%20Buttercream%20Icing%20(From%20Cupcakes%20from%20the%20Primrose%20Bakery%20by%20Martha%20Swift%20and%20Lisa%20Thomas)%3C/p%3E%3Cp%3EIngredients%20(enough%20for%20about%2020%20cupcakes)%3C/p%3E%3Cp%3E110g%20unsalted%20butter%3C/p%3E%3Cp%3E60ml%20semi%20skimmed%20milk%3C/p%3E%3Cp%3E1%20tsp%20good%20quality%20vanilla%20extract%3C/p%3E%3Cp%3E500g%20icing%20sugar,%20shifted%3C/p%3E%3Cp%3EFood%20colouring%20(optional)%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl%20beat%20the%20butter,%20milk,%20vanilla%20extract%20and%20half%20the%20icing%20sugar%20until%20smooth.%20%20This%20can%20take%20a%20few%20minutes.%3C/p%3E%3Cp%3EGradually%20add%20the%20remaining%20icing%20sugar%20and%20beat%20again%20until%20the%20buttercream%20is%20smooth%20and%20creamy.%20Then%20add%20food%20colouring%20drop%20by%20drop%20until%20you%20reach%20the%20desired%20shade.%3C/p%3E%3Cp%3ESpread%20the%20icing%20onto%20the%20cupcakes%20using%20a%20palette%20knife%20and%20decorate%20as%20desired.%3C/p%3E%3Cp%3EOverall,%20I%20think%20the%20cupcakes%20were%20a%20great%20success.%20They%20are%20very%20easy%20to%20make.%20I%20think%20my%20decorating%20skills%20need%20improving%20though!%3C/p%3E%3Cp%3EHope%20you%20have%20a%20lovely%20Valentine%E2%80%99s%20Day.%3C/p%3E%3Cp%3EHappy%20Cooking!%3C/p%3E){kind=link}
