These, along with the Carrot Cake, are the reasons I don’t bake.

There is absolutely no point in making something that is not incredibly delicious.

I mean, why bother baking something that doesn’t taste good?

And, after going through all the work of making it, one certainly can’t just throw away the leftovers, now can one?

If they weren’t so good, maybe we could exercise a little restraint….

On the other hand, the faster we finish it all off the quicker we get back to normal, right?

These Lemon Bars are a combination of two favorites (making them doubly good).

The crust is from a cookie-type lemon bar that I have been making for years.

The lemon topping is from the Barefoot Contessa Parties cook book.

I wanted the creamier, topping, which is more like lemon curd, from the Barefoot Contessa recipe, but didn’t want the huge pan of bars that the recipe made.

I’m a great believer in compromise.

Ultra Lemony, Gooey Lemon Bars

Total time: 60 minutes

Ingredients:

Crust:

Instructions:

Combine flour, butter and sugar for crust

Press evenly into an 8 X 8 (20cm X 20cm) square baking pan, building up a 1/2″ edge.

Bake for 20 minutes at 350F (175C).

Whisk together all of the ingredients for the topping.

When the crust is done, remove from oven and pour topping over.

Return to oven and bake for 30 – 35 minutes, until topping is just set.

Remove and allow to cool.

Sprinkle with a bit more confectioners sugar…

I cut this into small, 1 inch squares to have with after dinner coffee.

Now I’m cutting it into big squares to have for breakfast…. with coffee.

We have an interesting wall in the last room upstairs. The chimney from the big fireplace is on the same wall as the electrical box and the barn door….

It’s not a flat wall….

The plan, so far, is to do either side of the chimney in wood and to do ‘surface’ stones over the chimney to bring it out further than the wood walls.

At least, that’s the plan, so far….

I thought you would like to see the view from my computer chair during this bizarre summer we’re having (or not having).

They’re not on their beds because it’s summer and they don’t sleep on beds in summer.

They’re not outside because the doors aren’t open because it’s not warm enough.

So they lay by me, in the hall, facing the door in case it opens (magically) and they can run outside.

Why, you may wonder, don’t they just go outside?

They do. Whenever I go outside they go with me.

If I come back in without them they stand at the door and bark until I let them in.

If it’s warm (it was, one day last week) and I leave the door open, they happily run in and out all day, patrolling the front garden, barking at everything that moves, then coming in to tell me all about it

We want more warm days…

We’re bored.
