Secret Recipe Club Post: The Ultimate Breakfast Sandwich from The Kitchen Witch
Today is the day for Group C. Again, let me just state how thrilled I was with my SRC “secret pal” this month!
I wish the Kitchen Witch were my next door neighbor. She is such a cool chick.
She rides a Harley.
She is retired from the Air Force after twenty-two years.
She and hubby, “MacGyver,” have a Brady Bunch-type of blended family with “Baby Boy” being the last of the bunch at home.
She has lived in Germany (where she met “MacGyver.”)
She has traveled to Africa and Tunisia just to name a few exotic places.
She has a weekend cabin in the mountains.
She can bake bread in a cast-iron Dutch oven over an open fire.
She is unapologetic and real:
I am who I am, I am not politically correct, if you don’t like what or how I say things, read someone else’s blog, I am not snarky, I try to be considerate. I have the proverbial champagne taste and beer budget. I’m not trying to be something I’m not, I’m very happy with the beer, but given the opportunity (read: cheap or free) I’ll be happy to take the champagne! I still love Velveeta cheese, Miller Lite, boxed wine, cheap costume jewelry and many other tacky things. On the flip side I enjoy truffles, foie gras, veal, seafood and other expensive and sometimes exotic ingredients.
Kitchen Witch (aka “Giggles”), will you be my best friend?
OK, I promise not to gush too much during the rest of this post.
That being said, she has great recipes, great ramblings, and a great logo.
I know that everyone says this too, but I truly had a hard time figuring out what I wanted to make. I at least narrowed it down to the following recipes:
Loose meat sandwiches

Oreo Cookie Brownies (I am hooked on anything mentioning Oreos and brownies in the same recipe after last month’s SRC post. )
The Ultimate Breakfast Sandwich (And, I mean ULTIMATE!)
Since this post is due on Monday and I needed a fantastic weekend breakfast, I decided that “The Ultimate Breakfast Sandwich” had to be the featured recipe for this post. (Not that I rushed picking a recipe, but I did have my Cook the Books post due on or before Monday as well as attending a Harvest Beer Festival on Saturday. Really, I needed to do a breakfast dish for Sunday!)
This is her recipe straight from her site (with some additional options in italics from me):
The Ultimate Breakfast Sandwich
Health Alert Warning! Before proceeding please check your cholesterol, blood pressure, lipids, blood sugar levels or anything else that may be affected by a totally decadent sandwich.
- 8 slices Texas Toast or homemade honey-wheat bread
- 8 slices peppered bacon, cooked crisp or 4 sausage patties
- 4 fried eggs
- 4 slices of sharp cheddar cheese or a sprinkling of grated cheese
- 4 teaspoons of strawberry jam or blackberry-thyme jam
- 2 eggs, lightly beaten
- 1/4 cup milk
- butter and maple syrup
Heat a large griddle over medium heat. In a shallow bowl whisk together milk and eggs. Assemble sandwiches, lay the slices of Texas Toast bread out on the counter, spread 4 slices with strawberry jam top with two slices of bacon. On the other half layer the cheese then the egg, put the two halves together and dip in the egg batter, about 30 seconds on each side. Lightly butter griddle and griddle sandwiches until they are light golden brown, 1 to 2 minutes on each side. Serve with maple syrup and butter.
You may be wondering about the strawberry jam. That is another reason that I swapped out the bacon for sausage. My hubby worked at McDonald’s during high school. Apparently, a secret known only to former employees is to spread jam on the sausage biscuits. Grape jelly will do, but strawberry was to die for. (I always thought this was a little excessive until I tried it.)
I tweaked her recipe just a bit with some more breafasty options. I made homemade honey-wheat bread to replace the Texas Toast, used local sausage to replace the bacon, and used homemade blackberry-thyme jam to replace the strawberry.

I also did just a sprinkling of cheese and I found some agave maple syrup to help our “cholesterol, blood pressure, lipids,” etc. And, because I have tried to make Monte Christos before with little success, I decided to make the French toast in the traditional way and do my assemblage after everything was cooked.

Luckily, on the weekends, we typically eat a big breakfast and then skip lunch to grill something scrumptious for dinner. This was more than a big breakfast—it was huge. It definitely kept us going until supper.

I am going to make the other recipes mentioned above, and I am going to try making my own Suet for the birds this winter from her recipe. I, mean seriously, the variety of this biker chick’s recipes is limitless! Giggles is now on my Google Reader and Favorite Blog list.
