Рецепт Two Easy Muffin Top Cookies – Mango Oats & Mixed Fruit Chocolate Chips
I like to add plenty of fresh fruits in my baking which could be very intimidating at times, as the extra juices from the fruits could easily ruin the texture of the baked goodies. And if it is a cookie in baking quest it becomes all the more difficult to get a perfect crisp and crumbly finish with fresh fruits in it. Muffin Top cookies is the perfect answer to it! A cross between a muffin and a cookie these baked goodies are soft & chewy due to high liquid content of fruit mix in them.
Yes these Mango Oats & Mixed Fruit Chocolate chip cookies are cake-like soft from inside and crisp from outside and are a real healthy treat to indulge in, since it can be baked with very less sugar and fat. Quite easy to bake these cookies are delicate and are bursting with the goodness of fresh fruits in it.
1. Mixed Fruit Chocolate Chip Cookies
Mixed fruits with cinnamon and brown sugar.
Ingredients;
- 1/2 cup oats
- 1/4 cup wholewheat flour
- 1 tbsp all purpose flour
- 1/2 cup mixed fruits
- 1/2 cup brown sugar
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. yogurt
- 1 tbsp. oil/melted butter
- A pinch of salt
- 1 tsp. cinnamon powder
- 1 tbsp chocolate chips
ready to go in the oven...
Method; Peel and prep all the fruits, I took mango, plum, apples for the cookies. I left the skin on for the apples and the plums. Dice them into very fine pieces.
Mix cinnamon powder and a little brown sugar in the diced mixed fruits and keep them aside.
Add wholewheat flour, oats, baking powder, baking soda and salt in a large vessel and mix well. Add yogurt, brown sugar and oil or melted butter in another vessel and whisk it till the sugar melts.
Pour the yogurt mix into the dry ingredients and make a dough
Chewy fruity delights!
Grease a baking tray with little oil or lay a parchment paper on it. Drop a spoonful of hte above batter on the baking tray.Sprinkle a little of chocolate chips over each cookie and press slightly to embed it in the cookie.
Bake the cookies at 190°C for 15-20 minutes or till done.
Perfect with evening cuppa..
Brown sugar and the fruit mix gives a lovely brown color to these cookies. Chewy fruit chunks in every bite is what makes these cookies a delight to have it for a perfect weekend breakfast treat.
2. Mango & Blueberry Oats Cookies
mango puree, oats and bluberries..
Ingredients;
1/2 cup wholewheat flour
1/2 cup oats
1/2 cup mango puree
1/2 cup sugar
2 tsp. oil/melted butter
1/2 tsp baking powder
1/4 tsp. baking soda
1 tsp. yogurt
A pinch of salt
1/4 cup dried blueberries
1/2 tsp. cardamom powder
ready to go in the refrigerator..
Method; Peel and dice a small mango. Puree into fine paste and keep aside. Take a large vessel and add wholewheat flour, oats, salt, baking powder, cardamom powder, sugar and the blueberries in it. Add oil or melted butter and yogurt in the mango puree and mix well.
Add the liquid content in the dry content. Make a soft dough with all the ingredients. Wrap the dough in a plastic wrap and refrigerate it for 20 minutes.
Mango delights..
Grease a baking tray with a little oil or lay a parchment paper on it.
Take out from refrigerator and make small balls from the dough, arrange them on the baking tray leaving a gap in between each cookies. Flatten the cookie a little with the back of a spoon.
Bake the cookies at 190°C for 20 minutes or till done.

Notes;
Cardamom in the mango cookies give a delightful flavor, replace it with cinnamon if you can’t find the same.
These cookies are soft cake-like and are not crisp and crumbly.
Keep the thickness slightly more than the normal cookies for these muffin top cookies.
Replace the blueberries with raisins or any other dried fruits of your choice.
These muffin top cookies make a perfect breakfast.
Make the dough and refrigerate overnight for a quick breakfast bake the next morning.
Spread any fruit preserve or Nutella and sandwich two cookies to make a healthy snack for your kids.
