%20lots%20of%20relaxation,%20soul%20searching,%20spending%20quality%20time%20with%20loved%20ones%20and%20attempting%20to%20eat%20normally%20I%20am%20hopefully%20back%20on%20the%20road%20to%20recovery..%20I%20am%20trialling%20out%20a%20few%20different%20health%20foods%20and%20will%20be%20reporting%20back%20at%20a%20late%20date%20with%20the%20results..%3C/p%3E%3Cp%3E..Fortunately%20its%20already%20paid%20off%20a%20little%20%E2%80%93%20this%20past%20week%20saw%20me%20back%20at%20work,%20albeit%20in%20a%20new%20role%20which%20is%20a%20little%20less%20physical%20and%20I%20no%20longer%20come%20home%20in%20tears%20of%20pain,%20which%20has%20to%20be%20a%20bonus.%20It%E2%80%99s%20still%20a%20little%20up%20in%20the%20air%20as%20to%20whether%20its%20long%20term%20but%20at%20least%20its%20something,%20and%20whilst%20its%20rather%20busy%20I%20quite%20enjoy%20it!%20Best%20of%20all%20its%20Monday%20to%20Friday%20and%20no%20more%20shifts!%20Yay!%20I%20am%20Taurean%20and%20creature%20of%20habit,%20we%20like%20routine!!%3C/p%3E%3Cp%3EThese%20delicious%20and%20easy%20Twice%20baked%20Tuna%20jackets%20were%20made%20during%20one%20of%20the%20brighter%20days%20and%20are%20delicious.%20Jacket%20potatoes%20are%20such%20an%20easy%20low%20faff%20meal,%20and%20for%20bad%20days%20a%20comfort%20to%20the%20soul%20too!%20We%20always%20tend%20to%20have%20tins%20of%20tuna%20in%20the%20cupboards,%20very%20handy%20for%20when%20you%20have%20forgotten%20to%20thaw%20or%20buy%20anything%20else%20in!%20Though%20doing%20the%20potatoes%20in%20the%20oven%20is%20necessary,%20micro-zapped%20jackets%20just%20are%20not%20the%20same%20and%20as%20there%20is%20only%20about%205%20minutes%20max%20of%20preparation%20involved%20its%20well%20worth%20the%20wait,%20and%20you%20can%20rest%20in%20between!%20I%20love%20the%20look%20of%20the%20twice%20baked%20ones,%20are%20almost%20cottage%20like..%3C/p%3E%3Cp%3EYou%20can%20use%20standard%20wholegrain%20mustard%20in%20this,%20however%20if%20you%20have%20a%20flavoured%20one%20even%20better%20%E2%80%93%20I%20used%20Bulldog%20mustard,%20which%20has%20a%20an%20extra%20chilli%20kick%20and%20it%20helps%20liven%20it%20up!%20If%20you%20have%20a%20taste%20for%20chilli%20try%20adding%20a%20little%20chilli%20sauce%20or%20freshly%20sliced%20chilli!%3C/p%3E%3Cp%3EHeat%20your%20oven%20to%20about%20210o%20%E2%80%93%3C/p%3E%3Cp%3Emine%20is%20ancient%20and%20slow%20so%20be%20cautious!%3C/p%3E%3Cp%3ERoll%20the%20potatoes%20in%20oil,%20pierce%3C/p%3E%3Cp%3Eand%20place%20on%20a%20small%20baking%20tin,%20roast%20for%20around%20an%20hour%20%E2%80%93%20will%20depend%20on%20your%3C/p%3E%3Cp%3Eoven%20and%20potato%20size%20or%20until%20cooked%20through%20%E2%80%93%20a%20skewer%20will%20come%20away%20easily.%3C/p%3E%3Cp%3ECarefully%20transfer%20the%20potatoes%3C/p%3E%3Cp%3Eto%20a%20chopping%20board,%20slice%20the%20top%20off%20lengthways%20-%20about%201/2%20an%20inch%20and%20scoop%20out%20the%20insides%3C/p%3E%3Cp%3Einto%20a%20bowl,%20being%20careful%20not%20to%20pierce%20the%20shell.%3C/p%3E%3Cp%3EMix%20in%20the%20remaining%20ingredients%20in%20a%20bowl,%20add%20the%20mash,%20mix%20and%20season%20to%20taste:%3C/p%3E%3Cp%3EUse%20the%20mixture%20to%20re-fill%20the%20potatoes,%20put%20their%20lids%20back%20on%20and%20bake%20for%20a%20further%2015-20%20minutes%20or%20until%20hot%20inside%20and%20cooked%20through.%3C/p%3E%3Cp%3EYou%20can%20serve%20with%20your%20choice%3C/p%3E%3Cp%3Eof%20green%20veg.%20I%20made%20a%20quick%20green%20bean%20saute%20to%20serve%20with%20mine.%20Frozen%20green%3C/p%3E%3Cp%3Ebeans%20are%20a%20great%20veg%20to%20keep%20in%20the%20freezer,%20and%20cook%20quickly%20with%20little%3C/p%3E%3Cp%3Efuss!%3C/p%3E%3Cp%3E150g%20frozen%20fine%20green%20beans%3C/p%3E%3Cp%3E%C2%BD%20red%20pepper,%20finely%20sliced%3C/p%3E%3Cp%3E2%20tsp%20lemon%20juice%3C/p%3E%3Cp%3E1%20knob%20unsalted%20butter%3C/p%3E%3Cp%3E1%20sliced%20spring%20onion%3C/p%3E%3Cp%3EHeat%20a%20non%20stick%20frying%20pan,%20add%3C/p%3E%3Cp%3Ethe%20green%20beans%20and%20cook%20on%20a%20medium%20heat%20%E2%80%93%20they%20will%20thaw%20out%20quickly,%20stir%3C/p%3E%3Cp%3Ethrough%20the%20red%20pepper%20and%20spring%20onion,%20add%20the%20butter%20and%20lemon%20juice%20and%20fry%3C/p%3E%3Cp%3Efor%20about%203-4%20minutes%20or%20until%20softened%20and%20cooked%20through.%20If%20they%20are%3C/p%3E%3Cp%3Esticking,%20add%20a%20splash%20of%20water%20to%20loosen.%3C/p%3E%3Cp%3EServe%20the%20Tuna%20jackets%20with%20the%20green%20bean%20saute:%3C/p%3E%3Cp%3EWe%20both%20loved%20these%20stuffed%20potatoes%20and%20its%20something%20which%20will%20made%20again,%20and%20again!%3C/p%3E){kind=link}
