Turkey Scramble Ole’
Ingredients
- 1 pound ground turkey
- 1/2 red onion, diced
- 1.5 cups chopped mushrooms
- 1 tablespoon chili powder
- 2-3 cloves of garlic, minced
- 2 cups chopped parsley
- sea salt to taste
- 3-4 poached eggs
- 1 avocado, sliced
- 1 bunch of cilantro, chopped
- 2 Roma tomatoes, diced
- 1/4 cup sliced green olives
1 jalapeño, sliced (optional)
Directions
In a cast iron skillet, heat turkey, onions, and mushrooms over medium-high heat until turkey is cooked. Stir in chili powder, garlic, parsley, and salt. Cook for an additional 3 minutes. Remove from heat.
Poach eggs. (Poach one egg per person being served)
Garnish skillet mixture with eggs, avocado, cilantro, tomatoes, green olives, and optional jalapeño.
