%20is%20due%20to%20my%20ol'%20pops%20lending%20me%20a%20few%20thousand%20air%20miles%20so%20I%20could%20make%20it%20home%20for%20Christmas.%20This%20post%20is%20not%20brought%20to%20you%20by%20the%20man%20across%20the%20asile%20watching%20Twilight%20or%20the%20overly%20touchy-feely%20couple%20next%20to%20me.%20Nope.%20Not%20at%20all.%3C/p%3E%3Cp%3EI'm%20slowly%20but%20surely%20getting%20into%20the%20Christmas%20spirit.%20I%20would%20like%20to%20think%20my%20journey%20down%20jolly%20lane%20began%20somewhere%20in%20West%20Seattle%20sitting%20in%20a%20second-run%20theater%20watching%20a%20slightly%20askew%20showing%20of%20%22A%20Very%20Muppet%20Christmas%22.%20Not%20only%20was%20I%20good%20Seattelite%20and%20donated%20a%20massive%20bag%20of%20dog%20food%20to%20the%20Humane%20Society%20of%20Seattle%20(there%20are%20more%20dogs%20than%20kids%20in%20the%20city,%20it's%20obvious%20who%20we%20love%20more)%20but%20I%20also%20roped%20two%20of%20my%20closest%20friends%20into%20going%20with%20me.%20We%20left%20the%20theater%20feeling%20spirited,%20mainly%20due%20to%20the%20excitement%20of%20the%20hundreds%20of%20children%20surrounding%20us,%20and%20my%20skin%20is%20losing%20its%20green%20tint%20and%20I%20think%20my%20heart%20has%20grown%20at%20least%201.25%20sizes.%20The%20last%20part%20may%20be%20because%20of%20holiday%20food%20but%20let%20us%20pretend%20it's%20from%20Christmas%20and%20going%20back%20to%20the%20Midwest%20for%20the%20first%20time%20in%20a%20year.%3C/p%3E%3Cp%3EWhile%20I%20may%20still%20be%20working%20up%20to%20celebrating%20Christmas,%20I%20was%20surely%20in%20the%20celebratory%20spirit%20last%20weekend.%20%20One%20of%20my%20best%20friends%20from%20not%20only%20high%20school,%20but%20also%20college,%20now%20lives%20in%20Seattle%20with%20her%20boyfriend%20(also%20an%20alum%20of%20BHS%20and%20Michigan)%20doing%20the%20whole%20AmeriCorps%20thing.%20I%20can't%20be%20the%20first%20one%20to%20say%20it's%20always%20nice%20to%20have%20a%20piece%20of%20your%20upbringing%20in%20your%20new%20home.%20As%20her%20birthday%20falls%20at%20the%20end%20of%20December,%20she%20rarely%20is%20able%20to%20have%20a%20birthday%20party,%20let%20alone%20in%20the%20company%20of%20twenty%20plus%20people.%20Her%20boyfriend%20came%20up%20with%20the%20idea%20to%20throw%20her%20an%20early%20surprise%20birthday%20party%20with%20me%20at%20the%20helm%20helping%20spread%20the%20word.%20While%20I%20guess%20actually%20having%20people%20at%20the%20party%20is%20pretty%20important,%20I%20personally%20think%20having%20the%20perfect%20cake%20is%20crucial.%3C/p%3E%3Cp%3ECasually%20bringing%20up%20the%20topic%20of%20cake%20at%20our%20weekly%20girls%20Glee%20night%20earlier%20in%20the%20week,%20the%20birthday%20girl%20in%20question%20explained%20to%20here%20that%20there%20can%20be%20no%20such%20thing%20as%20too%20much%20chocolate.%20Ever.%20Triple%20chocolate%20diabetic-shock%20ice%20cream?%20Bring%20it.%20Girl%20hath%20no%20fear.%20So%20I%20made%20the%20most%20ridiculously%20over%20the%20top%20chocolate%20cake.%20Dark%20chocolate%20cake%20PLUS%20dark%20chocolate%20almond%20whipped%20ganache%20PLUS%20a%20dark%20chocolate%20cake%20collar.%3C/p%3E%3Cp%3EOH%20YEAH.%3C/p%3E%3Cp%3EOh,%20and%20it%20was%20pretty%20cool%20that%20a%20lot%20of%20people%20showed%20up%20too%20the%20party%20too.%20And%20that%20'A'%20turned%2024.%20HAPPY%20BIRTHDAY!!%3C/p%3E%3Cp%3EDark%20Chocolate%20Cake%3C/p%3E%3Cp%3EAdapted%20fron%20Ina%20Garten%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Grease%20two%208-inch%20cake%20pans%20and%20line%20the%20bottom%20with%20parchment%20paper.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20a%20paddle%20attachment,%20combine%20sugar,%20flour,%20cocoa,%20baking%20soda,%20baking%20power%20and%20salt.%20Mix%20together.%3C/p%3E%3Cp%3EIn%20a%20small%20glass,%20milk%20almond%20milk%20and%20vinegar%20together%20with%20a%20fork.%20Allow%20to%20sit%20for%20a%20few%20minutes%20until%20almond%20milk%20starts%20to%20%22curdle.%22%20(Note:%20if%20this%20doesn't%20need%20your%20cake%20to%20be%20dairy-free,%20use%201%20cup%20of%20buttermilk).%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20beat%20eggs%20until%20they%20begin%20to%20froth.%20Whisk%20in%20almond%20milk%20mixture,%20coffee,%20vegetable%20oil%20and%20vanilla%20extract.%3C/p%3E%3Cp%3EWith%20mixer%20running,%20slowly%20add%20in%20liquid%20mixture%20until%20completely%20incorporated,%20taking%20care%20not%20to%20overbeat%20the%20batter.%3C/p%3E%3Cp%3EDivide%20better%20evenly%20between%20the%20two%20cake%20pans%20and%20bake%20for%2030-35%20minutes,%20or%20until%20tester%20is%20inserted%20into%20the%20middle%20of%20the%20cake%20and%20comes%20out%20clean.%20When%20done,%20leave%20in%20the%20pans%20for%2010%20minutes%20and%20then%20turn%20the%20cakes%20out%20onto%20a%20wire%20rack%20until%20completely%20cool.%20Frost%20as%20desired.%3C/p%3E%3Cp%3EWhipped%20Dark%20Chocolate%20Ganache%3C/p%3E%3Cp%3EThis%20recipe%20is%20incredibly%20flexible.%20I%20always%20do%20equal%20parts%20chocolate%20and%20almond%20milk%20but%20you%20can%20adjust%20the%20ratio%20to%20suit%20your%20ganache%20consistency%20tastes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E200g%20dark%20chocolate,%20chopped%3C/p%3E%3Cp%3E200g%20almond%20milk%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EChop%20dark%20chocolate%20and%20place%20in%20a%20medium%20heatproof%20bowl.%3C/p%3E%3Cp%3EIn%20a%20small%20sauce%20pan,%20heat%20almond%20milk%20until%20it%20starts%20to%20boil.%20Keep%20on%20eye%20on%20it%20-%20it%20tends%20to%20boil%20over%20when%20it's%20not%20being%20watched.%3C/p%3E%3Cp%3EPour%20heated%20almond%20milk%20over%20chopped%20chocolate%20and%20let%20it%20sit%20for%20one%20minute.%20Whisk%20together%20until%20uniform%20and%20smooth.%20Allow%20to%20cool%20completely%20(I%20sometimes%20use%20my%20fridge%20and%20freezer%20to%20speed%20to%20up).%3C/p%3E%3Cp%3EWhen%20cooled,%20use%20a%20whisk%20or%20whisk%20attachment%20on%20a%20mixer%20and%20beat%20until%20light%20in%20color%20and%20the%20texture%20of%20mousse.%3C/p%3E%3Cp%3EUse%20as%20desired%20on%20cake.%3C/p%3E%3Cp%3EAs%20this%20was%20the%20first%20time%20I've%20ever%20made%20a%20cake%20collar%20(I%20think%20it%20turned%20out%20pretty%20decent!),%20I'll%20direct%20your%20attention%20to%20a%20site%20that%20does%20a%20much%20better%20job%20explaining%20the%20process%20than%20I%20ever%20could.%20Here%20you%20go.%3C/p%3E){kind=link}
