2 c. sugar 1 c. butter 1 tbsp. grated lemon peel 1/4 c. lemon juice 1 teaspoon vanilla

2 Large eggs 3 1/4 c. flour 1 teaspoon salt 1 teaspoon soda 1 teaspoon cream of tartar

1. In large bowl, blend first 6 ingredients till smooth. (Lightly spoon into measuring c., level off). Stir in flour, salt, soda, and Cream of Tartar. Refrigeratefor 1 hour. preheat oven to 325 degrees. Form dough into 1 inch balls. Roll each in sugar, place 2 inches apart on greased cookie sheets. Bake for 15 to 20 min till light golden. Cookies will be soft in center.
