Tortellini Eggplant Casserole

What do you get when you mix tortellini, eggplant, Italian sausage and chunks of mozzarella? Well, you get a tortellini casserole of course! I used mild Italian sausage made from chicken instead of pork. In a casserole you really couldn’t tell and for those that don’t eat pork or are trying to make healthier choices I found it worked just fine. This one needs a little prep-ahead-of-time planning because of the eggplant. Perhaps a good weekend recipe?

  1. 1 medium eggplant, sliced ¼”thick
  2. Salt shaker
  3. 1 large onion, diced
  4. 3 tablespoons olive oil
  5. 2 lbs chicken Italian sausage, sliced ¾”thick
  6. 2 19oz bags frozen cheese tortellini, cooked
  7. 1 16 oz jar roasted red peppers, drained
  8. 1 lb mozzarella cut into ½” cubes
  9. 1 24 oz can spaghetti sauce
  10. 2/3 cup Parmesan cheese
