%20These%20nerves%20had%20me%20constantly%20making%20lists,%20revising%20lists,%20adding%20to%20lists,%20realizing%20that%20the%20scope%20of%20my%20lists%20were%20bordering%20on%20insane,%20editing%20lists%20and%20finally%20sucking%20it%20up%20and%20dragging%20my%20pile%20of%20lists%20along%20on%20numerous%20shopping%20trips.%3C/p%3E%3Cp%3EJust%20because%20I%20make%20lists%20does%20not%20mean%20that%20I%20am%20actually,%20in%20any%20way,%20organized.%3C/p%3E%3Cp%3EThe%20lists%20only%20mean%20that%20I%20can%20actually%20pin-point%20what%20I%20forgot%20when%20I%20get%20home%20and%20realize%20that%20the%20sinking%20feeling%20of%20having%20forgotten%20something%20major%20was,%20in%20fact,%20totally%20accurate.%3C/p%3E%3Cp%3ESo%20yeah,%20basically%20there%20was%20no%20way%20I%20was%20pulling%20myself%20together%20to%20post%20anything!%3C/p%3E%3Cp%3EChristmas%20now%20being%20safely%20behind%20us%20(with%20a%20New%20Year's%20roast%20looming%20over%20my%20head)%20I%20can%20tell%20you%20all%20that%20my%20turkey%20was%20delicious%20(is%20it%20bad%20manners%20to%20say%20that%20about%20your%20own%20food?)%20That%20I%20%20somehow%20managed%20to%20still%20by%20WAY%20too%20much%20food.%20And%20that%20all%20of%20my%20family%20members%20made%20it%20through%20our%20first%20holiday%20minus%20the%20centre%20of%20our%20small%20universe%20mostly%20unscathed.%3C/p%3E%3Cp%3EA%20couple%20of%20days%20before%20Christmas%20I%20tackled%20my%20second%20top%20chef%20experiment:%20Georgia%20Style%20Braised%20Pork%20Shoulder.%3C/p%3E%3Cp%3EI%20went%20with%20another%20Kevin%20Gillespie%20recipe%20(let%20me%20tell%20you%20now%20that%20there%20will%20be%20no%20rhyme%20nor%20reason%20to%20the%20dishes%20I%20choose%20to%20cook%20other%20than%20what%20local%20ingredients%20I%20have%20to%20choose%20from%20and%20what%20sounds%20tasty%20at%20the%20time.)%3C/p%3E%3Cp%3EKevin's%20food%20is%20really%20appealing%20to%20me%20in%20it's%20flavour%20profiles%20and%20also%20in%20the%20simplicity%20of%20the%20preparations.%20As%20a%20home%20cook%20I%20feel%20comfortable%20with%20his%20recipes.%3C/p%3E%3Cp%3EPork%20Shoulder%3C/p%3E%3Cp%3E1%20pork%20shoulder%20roast%3C/p%3E%3Cp%3E4%20pieces%20celery%20diced%3C/p%3E%3Cp%3E3%20onions%20diced%3C/p%3E%3Cp%3E1%20very%20large%20carrot%20diced%3C/p%3E%3Cp%3E1%20cup%20yellow%20mustard%3C/p%3E%3Cp%3E1%20cup%20cider%20vinegar%3C/p%3E%3Cp%3E1%201/2%20tsp.%20cayenne%20pepper%3C/p%3E%3Cp%3Edash%20black%20pepper%3C/p%3E%3Cp%3Esalt%3C/p%3E%3Cp%3E8%20cups%20water%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees.%3C/p%3E%3Cp%3ESlice%20pork%20shoulder%20into%208%20oz.%20portions.%3C/p%3E%3Cp%3ESeason%20with%20s&p%3C/p%3E%3Cp%3E2%20tbsp.%20oil%20in%20large%20stock%20pot.%3C/p%3E%3Cp%3EHeat%20oil%20to%20sear%20pork%20shoulder%20portions%20until%20browned.%3C/p%3E%3Cp%3ETransfer%20to%20large%20vessel%20to%20collect%20juices.%3C/p%3E%3Cp%3EAdd%20vegetables%20to%20same%20stock%20pot%20and%20carmelize%20until%20golden.%3C/p%3E%3Cp%3EReturn%20pork%20shoulder%20(and%20juices)%20to%20pot%20on%20top%20of%20vegetables.%3C/p%3E%3Cp%3EAdd%20in%20remaining%20ingredients.%3C/p%3E%3Cp%3EMix%20well.%3C/p%3E%3Cp%3EPlace%20in%20oven%20for%202%201/2%20hours.%3C/p%3E%3Cp%3ERemove%20from%20braising%20liquid%20and%20shred.%3C/p%3E%3Cp%3EServe%20with%20Eli's%20potato%20salad%20(recipe%20to%20follow)%3C/p%3E%3Cp%3EI%20found%20my%20shoulder%20a%20little%20dry%20so%20I%20decided%20to%20add%20light%20coating%20of%20a%20Georgia%20style%20(vinegar%20based)%20barbecue%20sauce.%20It%20ended%20up%20going%20really%20beautifully%20with%20the%20flavours%20of%20Eli's%20potato%20salad%20and%20really%20brought%20the%20two%20components%20together.%3C/p%3E%3Cp%3Es&p%3C/p%3E%3Cp%3EBoil%20potatoes%20and%20red%20onions%20in%20salted%20water%20until%20tender.%3C/p%3E%3Cp%3EShock%20in%20ice%20bath%20and%20drain.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20mix%20vegetables%20and%20egg..%3C/p%3E%3Cp%3EMix%20together%20mayo,%20mustard,%20relish,%20vinegar%20and%20sour%20cream.%3C/p%3E%3Cp%3ESeason%20dressing%20with%20s&p.%3C/p%3E%3Cp%3EAdd%20to%20salad%20and%20mix%20until%20potatoes%20cream%20together.%3C/p%3E%3Cp%3EServe%20with%20Kevin's%20pork%20shoulder%20on%20top.%3C/p%3E%3Cp%3EMy%20verdict%20on%20the%20dish:%20Deliciously%20tasty.%20The%20only%20potato%20salad%20I%20generally%20enjoy%20is%20my%20mother's%20but%20this%20one%20was%20wonderful%20and%20creamy,%20the%20mustard%20adding%20a%20nice%20boost%20of%20flavour.%3C/p%3E%3Cp%3EThe%20pork%20shoulder%20was%20subtly%20seasoned%20with%20the%20pork%20flavour%20really%20coming%20through.%20It%20had%20a%20beautiful%20texture.%3C/p%3E%3Cp%3EI%20couldn't%20stop%20snacking%20on%20it%20and%20SeaBass%20was%20totally%20into%20it.%20Definitely%20worth%20trying.%3C/p%3E%3Cp%3ENext%20up:%20Michael%20Voltaggio's%20cod%20with%20dashi%20broth.%3C/p%3E%3Cp%3EP.S.%20If%20anyone%20wants%20to%20suggest%20a%20dish%20or%20has%20tried%20a%20dish%20they'd%20like%20to%20post%20about%20on%20my%20blog,%20let%20me%20know!%3C/p%3E){kind=link}
