Рецепт Tomato Soup!
Today is the first day of my vacation and also a day where I don’t have anything really do it. I’ve been “busily”watching the TODAY show this morning and updating my blog. I cannot believe that it is snowing again!! I will make it to the gym at some point today, but the snow is a REAL deterrent.
Yesterday we did a couple of errands, gym, (no tanning), laundry, visited my grandma and aunt and stopped by my mom’s office to say hi. After we came home from the gym I was pretty excited to finish the tuna I made for Valentine’s Day.
Danny has been talking about a tomato soup that he made up in his head that involved lots of tomatoes (think like a sauce) and breadcrumbs. I avoided making it for the past two days, so yesterday I finally caved.
I knew I wanted to sneak in lots of veges, so I cut up 3 carrots, 4 stalks of celery, 1/4 of a red onion, 2 cloves of garlic (minced) and browned them in a tiny bit of olive oil. Then I put in about 1 cup low sodium chicken broth. I let them cook for about 10 minutes. Then I threw in one large can crushed tomatoes and 1 large can diced tomatoes. I let that simmer for 15 minutes. I added a couple stalks of kale and 4 spoonfuls (very exact) of small white beans and let it cook for 5 more minutes. I sprinkled sea salt, black pepper, parsley, a red pepper flakes on top of the “soup” and then tasted it to see what I needed more of (black pepper).
While it was cooking I toasted 2 pieces of ezekial bread for Danny’s “breadcrumb” soup. After it was toasted I put it in the food processor and made breadcrumbs. (I left it there until the end.) I used the immersion blender to blend up the soup so it was smooth. At the very end I threw in half of the breadcrumbs in the soup and mixed it all around.
It was very thick, next time I would probably use 2 cans of diced tomatoes rather than 1 crushed, 1 diced. Danny was VERY happy though.
I added extra breadcrumb to his, short grain brown rice and mozzarella. He basically had sauce in a bowl and loved every second of it.
I also had butternut squash fries, zucchini spaghetti and chickpeas with Annie’s dressing to go with my soup and bread.
This was an interesting dish, but it definitely warmed me up! I will be having some of it for lunch today after I get home from the gym and this frigid weather! Danny doesn’t ask for much in the way of food, so I figured I’d put his dreams to life.
One another note…. my sister and her boyfriend who are in college and don’t have very much when it comes to kitchen tools. They made amazing looking pumpkin gnocchi! I am so proud of them! Christine sent me pictures to show me.
They didn’t have a mixer, so they did it all by hand!
