  • 3 c. minced fresh tomatoes
  • 1/2 c. uncooked rice
  • 1 med. onion, minced
  • 1 med. bell pepper, minced
  • 15 ounce. can chili beans
  • 11 ounce. can whole corn
  • 2 c. minced cooked chicken
  • 3 tbsp. Mexican chicken seasoning mix
  • Velveeta cheese slices
  • Tomato slices
  • Parsley

  1. Stew tomatoes, rice, onion, pepper till tender; add in seasoning mix. In 9 x 13 inch baking dish layer beans, corn, minced chicken, and tomato mix. Top with cheese and tomato slices. Sprinkle with parsley and bake at 350 degrees for 20 min.
