Yes, it is a rather strange sounding name for a soup, isn't it? It even had the mister asking his usual question, "Why can't I just have some boiled chicken?" Believe me, he eats plenty of bland food so every now and then a little dose of flavor is not going to kill him. Last week we had a sample of Fancy Feast Cat food come in the mail - I was SO tempted to put it on a plate, nuke it and serve it to him - I'm sure he would have loved it! I'm still trying to serve him low-cal, healthy meals...even though he's so far off his diet I swear I hear the scales crying when he steps on! No, I'm not being mean, not really, you see, for years the mister would say things like, "If you want to lose weight then do it!", like it was EASY! Because he never had a weight problem - never gained an ounce, even though he ate vats of ice cream after every meal, donuts and pastries for breakfast, triple baconaters for lunch...not one ounce of fat on the man...until recently. I take no pleasure in seeing him a tad overweight - and I'm certainly not gloating...Karma is gloating, but not me!
This soup is more filling than say a regular tomato soup because it has black beans, adding in some protein - you won't be hungry an hour after eating a bowl full! Caramelized onions and garlic, canned tomatoes and beans and a bit of cream - it's really delicious with a nice little zip and will hit the spot on a cold winter night!
This can be on your table in under thirty minutes - it's perfect on a hectic week night. Serve it with a slice of bread or PIZZA or throw caution to the wind and whip up some grilled cheese sandwiches - they are the only things that could make this soup taste any better!
- Tomato Bean Soup ~ Pots and Pins
- 1 1/2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon sugar
- 1 can (15 oz.) tomato sauce
- 1 can (15 oz. ) black beans, drained
- 1 can (28 oz.) diced tomatoes, do not drain
- 1/2 teaspoon salt
- 1/2 to 1 teaspoon black pepper
- 1/2 cup cream
- Shredded Parmesan cheese for garnish
In a large, deep skillet or pot, saute onions in olive oil until just beginning to caramelize, about ten minutes. Stir in garlic and cook for one minute. Stir in sugar, tomato sauce, tomatoes and black beans. Stir in salt and pepper and bring to a boil. Cover with a lid, reduce heat to simmer and let cook for ten minutes. Using an immersion blender, blend the soup in the pan until smooth. Stir in cream. Cook for a few more minutes, until heated through. Dish up and serve with a tablespoon or so of Parmesan cheese. Serves 4.
I've lost track of my "standings" in the Kingsford Contest...I'm feeling every bit like I'm in 7th grade once again...standing in the back of the gym wearing my brother's shorts because my mom refused to buy me a pair of my own, she said, "No one will even notice!" Waiting to be picked to a volleyball team and being the last person standing - could have been due to me being hopelessly uncoordinated but I still like to think if I'd had NEW shorts I would have been picked FIRST!
