- Slice tomatoes crosswise into 1/2-inch-thick slices, 4 slices per tomato. Arrange 2 to 3 slices on each salad plate. Sprinkle the mozzarella on top of each tomato.
- Cut fresh basil leaves into strips and top each tomato with basil. Drizzle extra virgin olive oil over the tops and add in a dash of pepper. Enjoy!
- This recipe yields 4 servings.
- Serving size: 2 to 3 slices tomato with topping.
- Comments: Make this only in the summer or possibly when you can get very large, red, rip tomatoes. (Use only 2 to 3 tomatoes here to make up the 1 lb..) It's one of our favorite summer salads and a great appetizer or possibly part of an antipasto platter.
