It is something we did a ton of when I was young and I am now finding it a joy once again. I hadn’t used tomatillos much until recently, but now I can’t get enough of the things! Fill your canner half full, bring water to a boil and process the jars, jar lids and rings while getting everything else together.

Put all the salsa ingredients (minus the liquids) together in a food mill and process until small chunks are left. Add in the liquids and pour into a large saucepan and bring to a boil. Reduce heat and simmer for 10 minutes. Adjust seasoning as needed.

Ladle hot salsa into hot jars, leaving 1/2 inch head space; remove air bubbles and wipe the rim clean. Place a jar lid on top and apply a band, adjusting until finger tight.

Place the filled jars into the canner, and bring to a rolling boil. Process at a full boil, uncovered for 15 minutes. Remove jars to a cooling rack and leave undisturbed until thoroughly cool. Check lids for seal after 24 hours.
