.%20%20How%20could%20I%20not%20-%20it%20has%20rhubarb%20cooked%20two%20ways,%20oodles%20of%20caramel-like%20brown%20sugar%20and%20%20almonds.%20%20Yum!%3C/p%3E%3Cp%3EAlthough%20you%20need%20to%20prep%20the%20rhubarb%20before%20you%20can%20make%20the%20cake,%20it%20is%20fairly%20easy%20and%20quick%20to%20make.%20%20So%20that%20I%20could%20taste%20the%20end%20result,%20I%20made%20myself%20a%20mini%20cake:%3C/p%3E%3Cp%3EAnd%20the%20verdict?%20Delish!%20%20Unfortunately,%20I%20did%20not%20have%20any%20toffee%20on%20top%20of%20mine,%20but%20otherwise%20it%20was%20a%20replica%20of%20Craig's%20cake.%20%20Because%20the%20cake%20contains%20polenta%20and%20almond%20meal,%20it%20has%20both%20texture%20and%20crunch,%20and%20the%20polenta%20gives%20the%20crumb%20a%20lovely%20golden%20hue.%20%20The%20rhubarb%20adds%20moisture%20and%20flavour,%20and%20the%20brown%20sugar%20gives%20a%20glorious%20caramel%20flavour%20to%20the%20cake.%20%20There%20is%20also%20rhubarb%20on%20top%20of%20the%20cake%20in%20the%20recipe,%20but%20because%20I%20didn't%20want%20to%20make%20the%20cake%20soggy%20to%20give%20to%20Craig,%20who%20obviously%20wouldn't%20be%20eating%20it%20straight%20away,%20I%20left%20it%20off%20the%20top.%20%20However,%20there%20is%20plenty%20of%20rhubarb%20in%20the%20cake%20itself.%3C/p%3E%3Cp%3ETo%20make%20this%20cake%20with%20my%20adjustments,%20you%20will%20need:%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20180%20degrees%20Celsius%20and%20line%20a%2023cm%20round%20cake%20tin%20with%20baking%20paper,%20spray%20with%20non-stick%20cooking%20spray%20and%20dust%20with%20rice%20flour.%3C/p%3E%3Cp%3EFor%20the%20baked%20rhubarb,%20put%20the%20rhubarb%20onto%20an%20oiled%20or%20lined%20baking%20tray,%20sprinkle%20with%20brandy%20and%20bake%20for%2020%20minutes,%20stirring%20half%20way%20through.%20%20Remove%20the%20rhubarb%20from%20the%20oven%20and%20allow%20it%20to%20cool,%20but%20leave%20the%20oven%20on%20and%20reduce%20the%20temperature%20to%20170%20degrees%20Celsius%20(I%20didn't%20reduce%20it).%3C/p%3E%3Cp%3ETo%20make%20the%20toffee%20rhubarb,%20melt%20the%20dairy%20free%20spread%20in%20a%20saucepan,%20and%20add%20the%20sugar,%20golden%20syrup%20and%20rhubarb.%20%20Stir%20until%20a%20toffee%20sauce%20forms,%20then%20simmer%20for%20around%205%20minutes%20or%20until%20the%20rhubarb%20is%20soft%20but%20still%20maintains%20its%20shape.%20%20Take%20off%20the%20heat.%3C/p%3E%3Cp%3EBreak%20the%20eggs%20into%20the%20bowl%20of%20a%20stand%20mixer%20and%20add%20all%20the%20dry%20ingredients,%20the%20extracts,%20the%20melted%20dairy%20free%20spread%20and%20the%20toffee%20rhubarb%20and%20baked%20rhubarb.%20%20Beat%20with%20the%20paddle%20attachment%20until%20well%20combined.%20%20Pour%20the%20batter%20into%20the%20prepared%20cake%20tin,%20and%20bake%20for%20approximately%2040%20minutes%20or%20until%20cooked%20through.%3C/p%3E%3Cp%3ERemove%20the%20cake%20from%20the%20oven%20and%20allow%20it%20to%20cool%20in%20the%20tin%20for%20an%20hour.%20%20Unmould%20the%20cake%20onto%20a%20cake%20board%20or%20plate.%3C/p%3E%3Cp%3EMake%20the%20almond%20toffee%20topping%20by%20putting%20the%20almonds%20and%20sugar%20in%20a%20saucepan%20over%20low%20heat%20and%20stirring%20continuously%20until%20the%20sugar%20has%20dissolved%20and%20turned%20golden,%20and%20the%20almonds%20are%20coated%20with%20the%20liquid.%20%20Pour%20the%20toffee%20over%20the%20top%20of%20the%20cake%20and%20allow%20to%20cool%20and%20set%20before%20serving.%3C/p%3E){kind=link}
