Toffee Chip Banana Bread

- ½ cup Toffee chips
- 1¾ cups all-purpose flour
- 1½ teaspoons baking soda
- ½ teaspoon salt
- 3 eggs, at room temperature
- ¾ cup firmly packed light brown sugar
- ½ cup sugar
- 1 mashed ripe bananas
- ⅔ cup Grape Seed Oil
- additional ¼ cup toffee chips for the top of the bread
Position a rack in the center of the oven.
Preheat the oven to 350 degrees.
Coat a 9-by-5-inch loaf pan with nonstick spray..
Whisk the flour, baking soda, and salt together in a medium bowl.
Stir in the toffee chips.
Mix until thoroughly coated.
In a separate bowl, whisk the eggs, brown sugar, sugar, banana, and oil together. Add the dry ingredients to the wet and fold together just until combined.
Scrape into the prepared pan.
Sprinkle the remaining toffee chips evenly over top.

Ya know, I decided to post this recipe anyway. I think I might have under baked it. My intention was for the mini m&m’s to bake and rise to the top of this bread.
Now don’t get me wrong, it was super delicious. But, as you can see, it sunk a little in the middle.
In life, not everything is perfect. So let’s consider this one of life’s perfect imperfections.
