- Heat 2 Tbsp. of the extra virgin olive oil in a medium saucepan over medium-high heat till almost smoking. Add in the onion and shallots and cook till soft. Add in half of the orzo and toast in the extra virgin olive oil till golden. Add in the remaining orzo and stock and bring to a boil, continue cooking till the liquid is absorbed. Remove from heat and add in the tomatoes and parsley, remaining 2 Tbsp. of extra virgin olive oil and the vinegar. Season with salt and pepper.
