- Preheat oven to warm.Lightly coat the chicken with flour.
- In a large skillet heat butter and oil ,
- Add the chicken and cook till lightly browned and slightly cooked through
- turn over and brown the other side.
- Remove chicken from the skillet and keep warm in the oven.
- In the same skillet add the garlic and mushrooms and saute lightly.
- Add the onions saute lightly.
- remove the onions,garlic and the mushrooms.
- Deglaze the pan with amaretto and reduce it to half.
- Stir in 6 tbls chicken stock and the cream add in onions,garlic,and mushrooms
- Remove the chicken from the oven and arrange on plates
- drape with sauce and and sprinkle with almonds and parsley
- Serve with rice add nice fresh green peas and your favorite wine .
