Most Sundays I have fantastic aspirations of spending the day in the kitchen, prepping all but our drinks for the upcoming week’s dinners.

Inevitably something gets in the way. Sometimes it is fun. Sometimes it is work. Lately, it is horse related.

I planned on prepping these patties and freezing them for a meal later in the week. As expected, something got in the way. It wasn’t an impromptu dinner date with a friend or a dreary chore, though. It was a craving. I decided that I could not not have these for dinner that very night.

And they were so good. So juicy. So our new favorite turkey burger. The toasted almond crumbs worked into the dough are unexpected and perfect. The shreds of Havarti cheese keep the burger juicy (as does cooking it perfectly, I might add). Fresh basil reminds you of summer and the perfect slice of tomato opens the heavens above.

Next time I’ll just have to whip up two pounds of them so that I can actually end up stocking my freezer instead of stuffing my belly.

Toasted Almond and Havarti Turkey Burgers (inspired by Pennies on a Platter)

Ingredients

Instructions

Place almonds in a plastic baggy and crush with a rolling pin.

Heat a dry skillet to medium high heat and toast almond crumbs until fragrant, just a few minutes.

Using kitchen shears, snip deli cheese into very small strips.

Combine turkey, parsley, basil, Worcestershire sauce, garlic powder, salt, almonds, and cheese. Work meat thoroughly with your hands to distribute ingredients evenly.

Form into 4 patties.

Cook as desired (broil for 4 minutes per side in the oven, grill, cook stovetop).

Top with lettuce and tomato.
