Ингредиенты

  • 6 med red new potato, scrubbed, and, left, whole
  • 1/2 head garlic, cloves, peeled
  • 2 Tbsp. extra virgin olive oil
  • 3 sprg fresh thyme
  • 1 sprg fresh rosemary
  •     cracked black pepper
  • 2 Tbsp. butter
  • 1/2 c. lowfat sour cream
  • 1 pch freshly grated nutmeg
  • 1 Tbsp. fresh parsley
  • 1 Tbsp. fresh chives
  •     salt, to taste
  •     pepper, to taste

Инструкции

  1. Preheat oven to 375 degrees F.In a large roasting pan toss potatoes and garlic cloves in extra virgin olive oil.
  2. Season with salt and plenty of cracked black pepper.
  3. Add in thyme and rosemary.
  4. Roast for 40 to 45 min or possibly till potatoes are golden brown and tender.
  5. Toss occasionally to prevent garlic from burning.
  6. Remove from the oven and let the potatoes cold in the pan about 10 min.
  7. Mash potatoes and garlic while still in the roasting pan with a hand masher.
  8. Leave skins on and potatoes chunky. Add in butter, lowfat sour cream, nutmeg and fresh herbs and stir just to blend.
