Ингредиенты

  • 1 c. (250 g) mascarpone
  • 1/3 c. (100 g) brown sugar
  • 24 sponge cakes or possibly lady fingers
  • 4 Large eggs
  • 1 Tbsp. vanilla sugar
  • 2 1/3 tbsp (5 cl) Marsala or possibly Amaretto
  • 7 ounce (20 cl) very black coffee (espresso)
  • Bitter Cocoa

  1. Break Large eggs and separate egg whites from yolks.
  2. Whiten egg yolks, gradually adding brown and vanilla sugars.
  3. Mix well, adding sugar to obtain an even, foamy mix.
  4. Add in mascarpone to Large eggs and mix with a whisk.
  5. Beat egg whites till stiff.
  6. Fold egg whites into egg / mascarpone mix. Mix in carefully with a spatula, lifting mix gently. Make sure egg whites don't collapse.
  7. In a deep dish, mix coffee with marsala
  8. Dip lady fingers briefly in dish. Don't allow lady fingers to soak too long or possibly they
  9. will turn to mush. The inside of the lady fingers should remain dry.
  10. Line bottom of terrine or possibly dish with a layer of lady fingers.
  11. Cover layer of lady fingers with mascarpone and egg mix.
  12. Alternate layers of lady fingers and cream.
  13. End with a layer of cream.
  14. Chill dish for 4 hrs.
  15. Serve portions sprinkled with unsweetened cocoa.
