Tinks Tuber Pie

This is a variation on piroghi. I use it as a veg to go with the main course.

Ингредиенты

  • 3 large potatoes
  • 1 swede
  • 2 shallots
  • 100g mature cheddar cheese
  • 100g gouda cheese
  • 1/4 cup milk
  • ready rolled short crust pastry or DIY

Инструкции

  1. Preheat the oven to 190c (300f)
  2. Peel and boil the potatoes and swede until they’re soft for mashing
  3. Dice and fry the shallots then put them through a blender
  4. Grate the cheddar and gouda
  5. In a large bowl put the diced shallots and cheeses
  6. Mash the potatoes and swede then stir into the bowl
  7. Roll out the pastry and use a cutter to suit the depth and size of your cake tray sections
  8. Grease the cake tray and press the pastry into the tray sections then fill with the mash mix
  9. Cut more pastry circles for lids and brush with milk before placing onto the pies
  10. Press down the edges to seal the pies and brush the tops with milk so they glaze in the oven
  11. Pop the tray into the oven for 25 minutes or until the top has browned nicely
  12. Try serving with creole spiced chicken cubes
