This is a great weeknight dish because it's fast and it's easy! Serves two.

- Salt & pepper then dust with flour both sides of tilapia.
- Melt 2 tablespoons butter and the olive oil in a pan on low. When the butter/oil mixture has melted, turn heat to medium high and add the tilapia when the butter/oil mixture is slightly brown. Cook first side approximately 3 minutes and the second side approximately 2 minutes.
- Add chicken broth to just under ½ cup mark in measuring cup. Squeeze lemon to end up at ½ cup of total liquid. Add capers.
- Remove fish from heat when done cooking and place in oven on low to keep warm.
- Turn heat to high and add the chicken broth mixture to butter/oil mixture. Scrape/deglaze the pan. Reduce about 3 minutes, then add 1 tablespoon of butter.
- Top the tilapia with the sauce and serve.
