When I was a little girl, my mom used to let my sister and me bake cookies all the time. She would never let us cook, but she let us bake.

We would spend hours in the kitchen. Oh, did I mention that mom wouldn’t let us bake in her kitchen. We grew up in San Francisco, where many homes had extra rooms built in the garage. We had a garage was so large that it could easily have fit four cars. Yes, four cars! But instead, my dad built a room. One would remember hearing them called “in-law” rooms. Seriously, can you imagine your in-laws living that close to you? It had a bathroom, with a shower, and a family room combined with a kitchen. (also known as the great room) And that it was. A great room. That’s where we were able to do our baking. So messing up mom’s kitchen was just not going to happen.

Do not overfill with the jam. It will spill over. You really need less than ½ teaspoon for each cookie.

Directions

Preheat oven to 350°F.

Coarsely grind the walnuts and oats in a food processor.

Transfer to a large bowl.

Add the flour, salt, syrup, honey and oil.

Stir to combine

Roll into walnut sized balls and place two inches apart from each other on a baking sheet .

Press thumb into the center of each cookie to create indentation for jam.

Place a ½ teaspoon. of desired jam onto each cookie and bake for 12 – 15 minutes or until edges are golden brown.

Transfer to rack a until the cookies have cooled completely. Store in air tight container…if you have any left!

When I go to visit mom and dad at out old house in The City, I always run down the stairs into the “Great Room” and sit on the couch and remember all the fun times we all shared. Including my brother eating so much cookie dough that to this day he doesn’t eat chocolate chip cookies anymore.

Now the next time I go visit, I am going to take a batch of cookies over to sit downstairs and enjoy them.
