Truth #1: Avocado beats lettuce every time!
There really is just something about a BLT, but in my opinion, switching out the L for an A makes a huge difference! BAT – Bacon, Avocado, and Tomato sandwiches are a classic favorite in the Ravelli House, particularly in the summer when tomatoes are at their best.
The above beauty is has bacon, avocado, tomato, Cabot 50% Light Cheddar, and a schmear of 0% Fat Greek Yogurt sandwiched between two slices of Udi’s gluten free bread. Parrish takes a schmear of mayo on his.
So simple but so darn good! Honestly, I could eat the above combo on a salad too, just skip the bread, and be just as happy. I mean…what’s not good with bacon right?!
Truth #2: I’m getting really excited about the GFAF Expo this weekend!
Maybe that truth should actually be: I’m going to eat my weight in samples this coming Saturday….
Seriously though, I can’t wait! I missed the expo last year and was so disappointed. An entire room of items I can eat? Sign me up!

Truth #3: I’m FINALLY getting to a place I’m proud of with my fitness level. FINALLY.
Last night I hit an amazing record:
A workout that torched over 1,000 calories. And you know what, when I finished Zumba last night, I wasn’t surprised to see that number. I knew I had worked my booty off for nearly two hours; PLUS I was drenched in sweat.
Fitness and exercise are not new for me, but my approach for the last…7 months is. Zumba has taught me my actual limits in exercise. Before Zumba I would do 30 minutes of moderate cardio and think, I’m done! When in actuality, I had barely even REALLY broken a sweat. Zumba pushed me, but it was so fun I didn’t even realize I was being pushed!
That realization of my limits translated into other workouts. Bootcamp, TRX, Crossfit, Nike Training Club. I now know what a real HARD workout looks like for me, and I can push myself until I get to that point, or exceed it.
Zumba has also built and expanded my lung capacity, which has helped with other workouts as well. I’m not saying that I don’t still huff and puff, because I do, but it doesn’t exhaust me like it did in March.
Today, 30 pounds lighter than I was in January, I can honestly say that I am addicted to exercising. Not in an unhealthy way, I’m keeping a balance with rest days, but I’m definitely obsessed with how working out makes me feel. And I’m seeing results, which tells me that I am doing the right things for my body.
And that’s no lie my friends What about you? Three truths…go!
