* A trifle is a dessert dish from Britain where things like brownies, pudding, whipped cream, fruits are layed in a glass bowl. I use clear plastic cups. It's a wonderful hot weather dessert.

- 3 egg yolks
- 1/4 cup sugar
- 2 tbs. flour
- 2 tbs. cornstarch
- 1 1/4 cups milk
- Lemon:
- 1/2 cup fresh lemon juice
- 4 egg yolks, beaten
- 1 cup sugar
- 5 tbs. unsalted butter, melted
- 1 tbs. lemon zest
- Ganache:
- 1/2 cup heavy cream (whipping cream)
- 2 cups semi-sweet chocolate morsels

- Vanilla:
- Combine yols, sugar, flour and cornstarch in a medium saucepot.
- Add milk, heat to medium high, stirring constantly.
- When the mix boils, turn it to low, and stir for 2 minutes or so until it thickens.
- Pour into prepared pastry shell or layer with other trifle ingredients.
- Lemon:
- Add ingredients to a saucepan, heat on medium high, stirring constantly, until it boils.
- Cut heat to low and stir until the mixture thickens - about 2 minutes.
- Ganache:
- Bring cream to a boil, remove from heat and stir in chocolate.
- Mix until blended.
