.%20Cholesterol%20is%20undeniably%20evil%20and%20toxic%20right?%3C/p%3E%3Cp%3ECholesterol%20is%20in%20fact%20essential%20for%20good%20health.%20It%20is%20a%20major%20cellular%20structural%20component,%20especially%20in%20the%20brain%20and%20nervous%20system.%20It%20is%20the%20backbone%20from%20which%20hormones%20such%20as%20testosterone,%20estrogen,%20progesterone,%20DHEA,%20pregnenolone,%20cortisol%20and%20vitamin%20D%20are%20made.%20A%20lack%20of%20cholesterol%20can%20lead%20to%20hormonal%20deficiencies,%20depression,%20cognitive%20impairment,%20pre-mature%20aging%20and%20increased%20risk%20for%20neurological%20disorders%20such%20as%20Parkinson%E2%80%99s%20disease.%3C/p%3E%3Cp%3EMost%20of%20the%20cholesterol%20in%20our%20bodies%20does%20not%20come%20from%20dietary%20intake,%20it%20is%20made%20from%20scratch%20by%20our%20liver.%20In%20fact,%20most%20of%20us%20can%20blame%20genetics%20and%20other%20dietary%20factors%20(such%20as%20high%20carb,%20trans%20fat,%20or%20sugar%20intake)%20for%20our%20high%20cholesterol%20levels.%3C/p%3E%3Cp%3EEggs%20are%20the%20perfect%20example%20of%20how%20an%20exceptionally%20nutritious%20food%20has%20gotten%20a%20bad%20rap%20without%20substantial%20evidence%20to%20support%20it.%20No%20other%20food%20contains%20as%20much%20cholesterol%20by%20weight%20as%20do%20egg%20yolks,%20which%20is%20why%20they%20have%20been%20villainized%20by%20the%20heart-health%20conscious%20for%20so%20long%20in%20favor%20of%20egg%20substitutes,%20or%20something%20else%20altogether.%3C/p%3E%3Cp%3EThis%20is%20really%20a%20shame%20as%20eggs%20are%20such%20a%20tremendously%20healthy%20and%20versatile%20food.%20Yes,%20they%20do%20contain%20a%20lot%20of%20cholesterol,%20but%20eating%20them%20rarely%20translates%20into%20higher%20blood%20cholesterol%20levels,%20much%20less%20an%20increase%20in%20heart%20disease%20(more%20on%20this%20later).%20In%20fact,%20they%20contain%20high%20amounts%20of%20many%20heart%20disease-fighting%20nutrients%20that%20are%20difficult%20to%20find%20in%20other%20foods%20such%20as%20lecithin,%20betaine,%20choline,%20glutathion,%20lutein%20and%20zeaxanthin,%20biotin%20and%20vitamin%20D.%3C/p%3E%3Cp%3EHow%20did%20this%20misunderstanding%20start%20in%20the%20first%20place?%20Over%20a%20century%20ago%20multiple%20studies%20looked%20at%20how%20rabbits%20respond%20to%20eating%20high%20amounts%20cholesterol.%20As%20you%20may%20have%20guessed%20the%20results%20were%20not%20good%20for%20the%20rabbits.%20They%20developed%20severe%20atherosclerosis.%20Nothing%20much%20was%20made%20of%20this%20as%20it%20relates%20to%20humans%20until%20the%201940%E2%80%98s%20and%201950%E2%80%99s%20when%20medical%20researchers%20extrapolated%20these%20results%20to%20humans.%20The%20problem%20is%20that%20rabbits%20are%20herbivores%20and%20cholesterol%20is%20not%20a%20normal%20component%20of%20their%20diet.%20The%20other%20problem%20is%20that%20rabbits%20are%20quite%20a%20bit%20different%20from%20humans%20and%20conclusions%20for%20people%20cannot%20be%20drawn%20from%20those%20findings.%3C/p%3E%3Cp%3EThe%20purpose%20of%20this%20article%20is%20not%20to%20present%20a%20comprehensive%20analysis%20of%20dietary%20cholesterol%20and%20its%20impact%20on%20health%20but%20the%20research%20showing%20that%20it%20is%20not%20as%20harmful%20as%20once%20thought%20is%20compelling.%20A%20study%20from%202005%20even%20showed%20that%20in%20the%20elderly%20population%20(65%20years%20and%20older)%20low%20LDL%20cholesterol%20levels%20were%20correlated%20with%20higher%20overall%20mortality.%20%20Granted%20this%20did%20not%20take%20dietary%20cholesterol%20intake%20into%20account%20but%20the%20results%20would%20suggest%20that%20consuming%20cholesterol%20certainly%20wouldn%E2%80%99t%20increase%20mortality.%3C/p%3E%3Cp%3EFurthermore,%20a%20large%20study%20(117,993%20participants)%20published%20in%20JAMA%20back%20in%201999%20showed%20no%20significant%20association%20between%20egg%20consumption%20and%20risk%20of%20cardiovascular%20disease%20or%20stroke%20in%20either%20men%20or%20women.%20It%20also%20found%20that%20those%20who%20ate%205-6%20eggs%20per%20week%20had%20significantly%20lower%20cholesterol%20levels%20than%20those%20who%20ate%20one%20egg%20per%20week.%3C/p%3E%3Cp%3EThere%20are%20numerous%20other%20studies%20with%20similar%20findings%20that%20demonstrate%20no%20connection%20between%20consuming%20eggs%20and%20other%20high%20cholesterol%20foods%20and%20an%20increase%20in%20cholesterol%20levels.%20%20Again,%20a%20healthy%20diet%20is%20largely%20based%20around%20eating%20whole%20foods%20and%20avoiding%20processed%20foods.%20In%20the%20meantime%20enjoy%20those%20eggs%20as%20a%20part%20of%20a%20healthy%20breakfast!%3C/p%3E){kind=link}
