Tacos are the quintessential comfort food. Their popularity continues to surge and it’s pretty easy to see why. Labor Day is just around the corner and that means time for great food with family and friends. This year I plan on setting up a taco bar in addition to the traditional burgers and hot dogs. Everyone loves tacos and I am certain everyone will love these Skirt Steak Tacos with spicy Grilled Pineapple Salsa. I must admit skirt steak used to be a cut I avoided altogether. It can be difficult to decipher especially if you never worked with it before. There are three things important for a great skirt steak: heat, marinade and slicing. Skirt steak is a pretty thin cut of meat so there isn’t much time it can spend hanging out with its favorite buddy, the heat. Grilling is ideal, you get a nice sear on the outside and a tender juicy inside. Remember the hotter the better, 500 degrees and higher. A great marinade is just as important as high heat. The steak and the marinade need to party together for a little while preferably for at least 2 hours. While thicker cuts of meat can do away with salt and pepper I find that skirt steak benefits from a good marinade. Let’s talk about slicing. Pay attention, this is very important. Just like with any other cut of meat let your skirt steak rest for about 10 minutes after its done cooking. If you slice it right away you’ll lose all the juices and turn your delicious steak into rubbery shoe leather. Don’t touch it, don’t even think about touching it. Leave it alone. Once rested make sure to slice against the grain. If you don’t, you’ll end up with super chewy cuts of meat and strings of muscle fibers. Skirt Steak Tacos with Grilled Pineapple Salsa
