%20they%20took%20over%20the%20entire%20patch%20and%20were%20very%20poor%20neighbors%20to%20my%20adjacent%20rows%20of%20string%20beans%20and%20cabbages.%20We%20had%20a%20nice%20harvest%20of%20varying%20size%20pumpkins,%20and%20they%20come%20in%20an%20array%20of%20red,%20yellow%20and%20orange%20shades,%20with%20varying%20degrees%20of%20ridginess.%3C/p%3E%3Cp%3EThe%20Rouge%20Vif%20d'Etampes%20variety%20is%20an%20old%20French%20market%20pumpkin,%20so%20naturally%20they%20make%20for%20good%20eating%20in%20addition%20to%20their%20stylish%20good%20looks.%20I%20decided%20to%20cook%20up%20one%20of%20my%20best-looking%20monsters%20(and%20one%20of%20the%20biggest,%20weighing%20in%20at%2030%20pounds!)%20and%20brought%20this%20lovely%20pumpkin%20inside.%3C/p%3E%3Cp%3EMy%20trusty%20scullery%20hound,%20Martha,%20was%20a%20little%20apprehensive%20about%20this%20Giant%20Vegetable,%20but%20a%20little%20peanut%20butter%20spread%20on%20the%20outside%20eased%20her%20mind.%3C/p%3E%3Cp%3EThe%20first%20order%20of%20business%20was%20to%20wash%20the%20outside%20and%20then%20attempt%20to%20carve%20the%20pumpkin%20into%20wedges%20for%20roasting.%20This%20was%20quite%20a%20feat%20and%20worthy%20of%20a%20Halloween%20horror%20movie.%20It%20involved%20a%20cleaver.%20And%20my%20biggest%20kitchen%20knife.%20I%20thought%20about%20a%20machete,%20or%20perhaps%20a%20small%20brush%20chainsaw,%20but%20Martha%20objected.%20The%20pumpkin%20grinned%20in%20a%20terrible%20rictus.%3C/p%3E%3Cp%3EIn%20the%20end,%20I%20would%20cleave%20deep%20into%20the%20pumpkin,%20then%20remove%20it%20and%20lever%20in%20my%20kitchen%20knife%20to%20hack%20off%20small%20wedges.%20The%20Rouge%20Vif%20d'Etampes%20is%20flattened%20(some%20might%20say%20squashed)%20so%20I%20found%20that%20trimming%20the%20tapered%20ends%20worked%20better%20to%20scoop%20out%20the%20seeds%20and%20strings.%20A%20grapefruit%20spoon%20was%20the%20instrument%20of%20choice%20for%20that%20project.%20I%20filled%20a%20roasting%20pan%20and%20my%20largest%20baking%20dish%20with%20a%201/2%20cup%20each%20of%20water,%20laid%20in%20the%20pumpkin%20slices%20and%20then%20roasted%20them%20for%201-1/2%20hours%20at%20375%20degrees%20F.%20And%20that%20only%20dealt%20with%20half%20of%20the%20pumpkin!%20So%20I%20repeated%20that%20process%20over%20the%20course%20of%20an%20afternoon.%3C/p%3E%3Cp%3EWhen%20cooled,%20I%20scooped%20the%20pumpkin%20flesh%20from%20the%20skins%20and%20then%20pureed%20it%20in%20my%20food%20processor.%20That%2030-lb.%20pumpkin%20made%20somewhere%20just%20shy%20of%2020%20cups%20of%20pumpkin%20puree!%20Some%20went%20into%20my%20already-stuffed-with-garden-harvest-freezer%20and%20about%20half%20was%20set%20aside%20for%20a%20second%20day%20of%20pumpkin%20mania.%3C/p%3E%3Cp%3EThere%20is%20a%20Royal%20Foodie%20Joust%20underway%20over%20at%20the%20Foodie%20Blogroll%20Forum%20and%20the%20three%20ingredients%20which%20must%20be%20jousted%20with%20to%20create%20a%20recipe%20are%20pumpkin,%20dark%20beer%20and%20sugar.%20I%20wanted%20to%20make%20something%20savory,%20rather%20than%20sweet,%20so%20after%20perusing%20a%20bunch%20of%20cookbooks%20and%20Internet%20recipes%20for%20pumpkin%20pasta%20recipes,%20I%20cooked%20up%20this%20very%20elegant%20variation%20on%20the%20old%20comfort%20food%20standby,%20macaroni%20and%20cheese%20with%20a%20Crispy%20crumb%20topping.%3C/p%3E%3Cp%3EI%20am%20happy%20to%20report%20that%20this%20creamy,%20pale%20orange%20concoction%20was%20gobbled%20up%20by%20my%20Crispy%20Crew%20and%20was%20even%20better%20heated%20up%20the%20next%20day%20after%20the%20delicate%20flavors%20melded%20more.%20I%20made%20our%20recipe%20gluten-free%20with%20GF%20pasta,%20bread%20crumbs%20and%20gluten-free%20beer,%20which%20are%20now%20so%20much%20more%20readily%20available%20in%20local%20food%20markets.%20Here's%20my%20autumnal%20recipe:%3C/p%3E%3Cp%3ECook%20pasta%20in%20boiling%20salted%20water%20until%20just%20al%20dente.%20Drain%20and%20rinse%20with%20cold%20water.%20Set%20aside.%3C/p%3E%3Cp%3EHeat%20oil%20in%20frying%20pan.%20Add%20onions%20and%20cook%20over%20low%20heat%20until%20softened,%20about%2010%20minutes.%20Sprinkle%20with%201%20tsp.%20salt%20and%20add%20beer.%20Turn%20up%20heat,%20bring%20to%20boil%20and%20then%20cook%20until%20beer%20is%20reduced%20by%20half,%20about%207-10%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20in%20large%20bowl,%20mix%20together%20pumpkin%20puree,%20yogurt,%20brown%20sugar%20and%20Parmesan.%20Mix%20in%20cooked%20onions%20and%20blend%20well.%20Carefully%20mix%20in%20cooked%20pasta%20(GF%20pasta%20tends%20to%20be%20brittler%20than%20wheat%20pasta)%20and%20pour%20into%20a%20greased%209%20x%2011%20baking%20dish.%3C/p%3E%3Cp%3EPlace%20walnuts,%20bread%20crumbs,%20and%20sage%20in%20food%20processor%20and%20whizz%20it%20up%20until%20crumbs%20are%20coarse.%20Season%20with%20salt%20and%20pepper.%20Sprinkle%20crumbs%20over%20macaroni%20in%20baking%20pan%20and%20dot%20with%20bits%20of%20softened%20butter.%3C/p%3E%3Cp%3EBake%20at%20375%20degrees%20F%20for%2030%20minutes,%20or%20u
