The Grand Finish – Looks Hard -Really Easy – Grand Marnier Souffle February 20, 2012 at 9:37 am Leave a comment (From the  Dessert Collection at emealsforyou.com) Grand Marnier Souffle If you go to a really good French restaurant; you may see souffles on the menu.  There is usually a caveat on the menu, ” please let us know if you will be ordering the souffle so that we may have it ready for you at the end of your meal.”   Wow, how good can the dessert be if you have to decide at the beginning of your meal; THAT GOOD!!! Now you add it up, good French restaurant, pre-plan your dessert, maybe a little pricy and poof you think this is something you can’t try at home.  Wrong, no really other than the fact that it will take you 10 minutes to put it together and about 15 minutes to bake, it really isn’t that hard to make. The secret is to have your ingredients all ready and the oven pre-heated.  Pour another glass of wine or whatever for everyone, and excuse yourself to attend to “the dessert” in the kitchen.  Whip the yolks, heat them and mix in with the whipped egg whites and put them in the oven.  Ten minutes maximum.  Step back into the kitchen 10 minutes later, maybe taking the plates with you to clear the table so the impressive dessert becomes the focal point.  Serve with a flourish, pouring a little additional Grand Marnier into the center of each souffle.  Julia Child eat your heart out. Grand Marnier Souffle Recipe Summary Complexity: Easy Serves: 4 Category: Dessert Meal: other (General) 1 Tb butter, unsalted 1 Tb sugar, granulated 5 large egg, yolks 0.33 cup sugar, granulated 5 large egg, whites 0.25 cup Grand Marnier 4 Tb Grand Marnier 1 Tb sugar, powdered Preheat oven to 400 degrees. Prepare 4, 4 ounce ramekins by rubbing the butter around the bottom and sides and then sprinkling them with sugar. Whisk the egg yolks and sugar together. Place in the top of a double boiler or place the bowl over some simmering water and stir continually until the eggs thicken and a ribbon forms when lifting the whisk. Whisk in the first Grand Marnier. Set aside and immediately whip egg whites to stiff but not dry peaks. Carefully fold some of the egg whites into the yolks. combine the rest of the egg whites and yolks. pour into prepared ramekins, about 2/3 of the way up. Place in the hot oven on the bottom rack and bake for 12 -15 minutes until golden brown and they have risen above the rim of the ramekin. Sprinkle with powered sugar and serve immediately. Place a spoon in the center of each and add a Tb of Grand Marnier. Note: The soufflés will deflate within 10 minutes of taking them out of the oven.
