%20living%20in%20a%20tiny%20studio%20apartment%20in%20New%20York's%20East%20Village%20to%20breathe%20life%20into%20a%20defunct,%20500-acre%20farm%20in%20Essex,%20NY%20with%20her%20future%20husband,%20Mark,%20a%20self-taught,%20first-generation%20farmer.%20Now%20that%20takes%20balls!%3C/p%3E%3Cp%3ETogether,%20they%20created%20a%20year-round%20CSA%20that%20supplies%20their%20members,%20some%20100+%20families,%20with%20everything%20they%20need%20for%20a%20complete%20local%20diet%20-%20milk,%20cheese,%20butter,%20eggs,%20beef,%20pork,%20forty%20different%20vegetables,%20dried%20beans,%20fruit,%20herbs,%20maple%20syrup,%20flours,%20and%20grains.%20And,%20as%20if%20that%20were%20not%20ambitious%20enough,%20they%20farm%20with%20draft%20horses,%20not%20tractors.%3C/p%3E%3Cp%3EKimball%20paints%20a%20vivid,%20honest%20picture%20of%20the%20challenges,%20fears,%20triumphs%20and%20joys%20of%20the%20life%20she%20and%20Mark%20create%20together.%20She%20does%20not%20gloss%20over%20the%20anxieties%20and%20difficulties%20inherent%20in%20making%20a%20major%20lifestyle%20shift%20and%20taking%20on%20a%20truly%20enormous%20challenge.%20But,%20in%20the%20end,%20the%20picture%20I%20was%20left%20with%20was%20that%20of%20a%20truly%20grounded,%20rooted%20existence%20(pardon%20the%20farm-y%20metaphors.)%20Although%20hers%20is%20not%20the%20life%20she'd%20ever%20have%20predicted%20she%20would%20have,%20it%20is%20a%20very%20good%20life%20--%20full%20and%20rich.%3C/p%3E%3Cp%3EKristin%20with%20the%20team.%20Photo%20by%20Deborah%20Feingold.I%20had%20trouble%20putting%20it%20down%20during%20my%20waking%20hours%20and%20even%20dreamed%20about%20farming%20while%20I%20was%20reading%20it.%20Here%20are%20a%20few%20excerpts%20I%20particularly%20enjoyed:%3C/p%3E%3Cp%3EHere%20Kimball%20is%20talking%20about%20compost%20-%20a%20passion%20of%20mine:%3C/p%3E%3Cp%3E%22Of%20all%20the%20confounding%20things%20I%20encountered%20that%20first%20year,%20the%20heat%20of%20decomposition%20-%20it's%20intensity%20and%20duration-was%20the%20most%20surprising,%20the%20one%20that%20made%20me%20want%20to%20slap%20my%20knee%20and%20say,%20Who%20knew?%20That%20heat%20comes%20from%20the%20action%20of%20hordes%20of%20organisms,%20some%20so%20tiny%20billions%20can%20live%20in%20a%20tablespoon%20of%20soil.%20They%20are%20in%20there,%20eating%20and%20multiplying%20and%20dying,%20feeding%20on%20and%20releasing%20the%20energy%20that%20the%20larger%20organisms%20-%20the%20plants%20and%20the%20animals-%20stored%20up%20in%20their%20time,%20energy%20that%20came,%20originally,%20from%20the%20sun.%20I%20think%20it's%20worth%20it,%20for%20wonder's%20sake,%20to%20stick%20your%20hand%20in%20a%20compost%20pile%20in%20winter%20and%20be%20burned%20by%20a%20series%20of%20suns%20that%20last%20set%20the%20summer%20before.%22%3C/p%3E%3Cp%3EA%20beautiful,%20vivid%20description%20of%20the%20farm:%3C/p%3E%3Cp%3E%22The%20fields%20are%20a%20clock%20read%20in%20colors.%20As%20the%20days%20of%20summer%20passed,%20the%20palette%20of%20our%20world%20shifted%20from%20bright%20greens%20to%20dark%20greens,%20then%20ocher,%20dun,%20all%20the%20variations%20of%20gold.%22%3C/p%3E%3Cp%3EOn%20harrowing%20the%20fields%20the%20old-fashioned%20way,%20with%20their%20horses,%20Silver%20and%20Sam:%3C/p%3E%3Cp%3E%22The%20furrows%20smoothed%20and%20flattened%20out%20behind%20us.%20When%20I%20stopped%20to%20clear%20a%20stick%20from%20between%20the%20discs,%20the%20ground%20felt%20springy%20underneath%20my%20feet,%20like%20a%20giant%20trampoline.%20It%20was%20a%20good%20workout%20for%20the%20horses,%20who%20were%20out%20of%20shape%20after%20their%20time%20off.%20We%20stopped%20at%20the%20end%20of%20each%20pass%20for%20a%20rest,%20and%20they%20stood%20and%20blew,%20and%20the%20sweat%20dripped%20from%20their%20bellies%20onto%20the%20raw%20earth%20like%20a%20balm%20or%20a%20blessing.%22%3C/p%3E%3Cp%3EThe%20book%20also%20includes%20several%20recipes%20for%20Essex%20Farm%20favorites.%20This%20one%20was%20my%20favorite%20-%20I%20can't%20wait%20to%20try%20it%20though%20the%20peas%20I%20planted%20last%20weekend%20are%20quite%20a%20long%20ways%20from%20being%20ready%20to%20eat.%3C/p%3E%3Cp%3EFresh%20Garden%20Peas%20In%20Milk%20With%20Mint%3C/p%3E%3Cp%3EA%20bowl%20of%20spring%20peas%20cooked%20in%20milk%20is%20worth%20any%20amount%20of%20time%20spent%20weeding%20and%20picking.%3C/p%3E%3Cp%3EHeat%20the%20milk%20and%20butter%20over%20medium%20heat%20in%20a%20saucepan%20until%20hot%20but%20not%20boiling.%20Add%20peas,%20salt,%20and%20pepper,%20and%20gently%20simmer%20until%20the%20peas%20are%20bright%20green%20and%20soft%20but%20not%20mushy.%20Remove%20from%20heat,%20add%20the%20mint%20leaves%20and%20salt%20and%20pepper%20to%20taste.%3C/p%3E){kind=link}
