%20as%20this%20February%2017%20is%20National%20Pancake%20Day%20and%20I%20could%20really%20use%20a%20day%20off.%20Mind%20you,%20I%20have%20no%20quibble%20with%20a%20pancake%20holiday%20whatsoever,%20especially%20given%20the%20fact%20that%20I've%20been%20invited%20to%20celebrate%20it%20-%20and%20T-Fal's%2060th%20anniversary%20-%20by%20the%20folks%20at%20Hungry%20Jack%20and%20T-Fal.%3C/p%3E%3Cp%3EAfter%20all,%20the%20gifts%20of%20pancake%20day%20rival%20those%20of%20Christmas:%20For%20my%20participation,%20I%20received%20a%20package%20of%20Hungry%20Jack%20Buttermilk%20Pancake%20Mix%20and%20Hungry%20Jack%20Syrup,%20along%20with%20T-Fal's%20newest%20product,%20a%2012-inch%20nonstick%20frypan,%20dubbed%20the%20Opticook%20due%20to%20a%20handy%20little%20circle%20in%20the%20middle%20that%20changes%20when%20the%20pan%20has%20reached%20proper%20cooking%20temperature.%20%20And,%20to%20spread%20the%20wealth,%20I%20have%20been%20authorized%20to%20award%20the%20very%20same%20bundle%20of%20goods%20to%20one%20lucky%20reader.%20%20More%20on%20that%20in%20a%20bit.%3C/p%3E%3Cp%3EIn%20return,%20I%20faithfully%20promised%20to%20come%20up%20with%20an%20original%20pancake%20creation%20of%20my%20own,%20which%20I%20now%20share%20with%20you.%3C/p%3E%3Cp%3EHere%20are%20the%20cast%20of%20characters%20in%20my%20Pancake%20Day%20treat:%3C/p%3E%3Cp%3EYes,%20my%20lovelies%20-%20you%20spot%20Brie%20and%20ham%20along%20with%20the%20usual%20sweet%20suspects%20of%20berries%20and%20lemon.%20I%20like%20to%20take%20my%20sweet%20with%20some%20savory%20whenever%20I%20can,%20and%20for%20this%20recipe%20I%20took%20inspiration%20from%20one%20of%20the%20most%20fondly%20remembered%20drunken%20late%20night%20foods%20of%20my%20youth:%20the%20Monte%20Cristo%20as%20served%20at%20the%20now-defunct%20Gampy's%20in%20Baltimore,%20Md.%3C/p%3E%3Cp%3EIt%20was,%20as%20I%20recall,%20a%20perfectly-greasy%20deep-fried%20ham%20and%20cheese%20sandwich,%20served%20with%20a%20raspberry%20dipping%20sauce.%20For%20my%20interpretation,%20I%20used%20pancakes%20to%20roll%20up%20Black%20Forest%20ham,%20Brie,%20and%20berries,%20which%20I%20topped%20with%20more%20berries,%20lemon%20zest,%20and%20copious%20amounts%20of%20syrup.%20This%20would%20have%20pleased%20my%20young%20drunken%20soul%20--%20it%20certainly%20pleased%20my%20(somewhat)%20older%20one!%3C/p%3E%3Cp%3EThe%20dish%20itself%20is%20pure%20simplicity.%20I%20must%20confess%20that%20I%20do%20not%20as%20a%20rule%20use%20pancake%20mix,%20as%20I'm%20a%20from-scratch%20kind%20of%20person;%20that%20said,%20the%20buttermilk%20mix%20made%20delicious%20pancakes%20and%20expedited%20the%20entire%20process%20immeasurably.%20And%20nothing%20stuck%20to%20the%20T-Fal%20pan%20(and%20the%20changing%20heat%20indicator%20circle,%20here%20obscured%20by%20a%20pancake,%20%20pleased%20my%20OCD):%3C/p%3E%3Cp%3ERather%20than%20take%20up%20space%20with%20a%20proper%20recipe,%20because%20this%20is%20so%20simple%20to%20pull%20together%20I'll%20just%20tell%20you%20what%20I%20did%20and%20let%20you%20look%20at%20pretty%20pictures.%3C/p%3E%3Cp%3EFirst,%20follow%20the%20package%20directions%20on%20the%20Hungry%20Jack%20pancake%20mix%20(you%20literally%20just%20add%20water).%20Make%20your%20pancakes%20-%20again,%20this%20isn't%20rocket%20science%20and%20the%20T-Fal%20nonstick%20pan%20makes%20this%20super%20easy%20-%20and%20when%20you've%20made%20as%20many%20as%20you%20like,%20%20lay%20a%20few%20slices%20of%20Black%20Forest%20ham,%20a%20healthy%20bit%20of%20Brie,%20and%20some%20berries%20on%20each%20individual%20pancake,%20like%20so:%3C/p%3E%3Cp%3ERoll%20those%20babies%20up%20and%20top%20with%20more%20berries,%20some%20lemon%20zest,%20and%20a%20whole%20mess%20of%20sweet,%20sweet%20Hungry%20Jack%20syrup.%20Eh%20voila!%20Your%20Monte%20Cristo%20Pancake%20Roll%20Ups%20-%20or,%20as%20I%20affectionately%20call%20them%20en%20masse,%20the%20Count%20of%20Monte%20Pancake:%3C/p%3E%3Cp%3EIf%20you,%20like%20me,%20adore%20the%20play%20of%20savory%20and%20sweet,%20you%20will%20probably%20want%20to%20make%20a%20whole%20lot%20of%20these.%20Pancake%20Day%20comes%20but%20once%20a%20year%20after%20all!%3C/p%3E%3Cp%3EAnd%20now,%20to%20reward%20your%20patience,%20I%20will%20share%20the%20rules%20of%20the%20giveaway.%20All%20you%20need%20to%20do%20is%20leave%20a%20comment%20below%20telling%20me%20your%20favorite%20way%20to%20enjoy%20pancakes.%20That's%20it!%20I'll%20pick%20the%20winner%20using%20Random.org%20on%20-%20what%20else?%20-%20Pancake%20Day,%20February%2017.%20The%20winner%20will%20receive%20their%20very%20own%20pancake%20kit%20consisting%20of%20the%20Hungry%20Jack%20Buttermilk%20Pancake%20Mix,%20Hungry%20Jack%20Syrup,%20and%20the%20brand-spanking-new%20T-Fal%20Opticook%20pan.%3C/p%3E%3Cp%3EGood%20luck%20and%20Happy%20Pancake%20Day.%3C/p%3E){kind=link}
