.%20%20However,%20the%20Coconut%20Swiss%20Buttercream%20is%20the%20star%20of%20this%20cake--%20silky%20and%20loaded%20with%20four%20sticks%20of%20butter!%3C/p%3E%3Cp%3EThis%20time,%20I%20wanted%20to%20try%20a%20different%20route.%20I%20wanted%20a%20moist%20white%20cake,%20that%20tastes%20like%20coconut.%20I%20also%20wanted%20a%20frosting%20(with%20only%20one%20stick%20of%20butter)%20that%20would%20taste%20like%20coconut--and%20then%20I%20wanted%20to%20add%20toasted%20coconut%20to%20finish%20off%20the%20whole%20cake.%20%20If%20you%20absolutely%20hate%20coconut,%20just%20leave%20out%20any%20coconut%20related%20ingredients.%20This%20cake%20will%20yield%20a%20moist%20white%20cake.%3C/p%3E%3Cp%3EI%20adapted%20a%20recipe%20from%20King%20Arthur%20Flour,%20because%20I%20had%20purchased%20a%20bag%20of%20their%20Coconut%20Milk%20Powder,%20and%20a%20bottle%20of%20Coconut%20Flavor.%20%20I%20didn't%20have%20a%20bag%20of%20their%20Queen%20Guinevere%20Cake%20Flour,%20but%20I%20always%20have%20their%20Unbleached%20Cake%20Flour%20on%20hand,%20so%20that's%20what%20I%20used.%3C/p%3E%3Cp%3EInstead%20of%20separating%20six%20eggs,%20for%20the%20whites%20only,%20I%20used%20Liquid%20Egg%20Whites.%20I%20also%20used%20buttermilk,%20instead%20of%20regular%20milk.%20%20I%20took%20a%20gamble%20that%20the%20buttermilk%20would%20be%20a%20help%20in%20my%20quest%20for%20a%20tender%20and%20moist%20white%20cake.%20%20See%20the%20baked%20white%20cakes,%20and%20those%20silver%20%22bands%22%20around%20the%20cake%20pan?%20I%20believe%20they%20really%20do%20work!%20%20My%20cakes%20bake%20more%20evenly.%3C/p%3E%3Cp%3Ecoconut%20milk).%3C/p%3E%3Cp%3EI%20decided%20to%20add%20a%20layer%20of%20Meyer%20Lemon%20Curd,%20that%20I%20made%20(and%20canned)%20a%20while%20ago.%20%20Lemon%20Curd%20is%20super%20easy%20to%20make,%20and%20I'll%20show%20you%20how%20right%20here.%20%20Or,%20you%20can%20buy%20a%20jar%20of%20it,%20which%20you%20can%20easily%20find%20at%20most%20grocery%20stores.%20%20I%20figured%20that%20the%20lemon%20tartness%20would%20tone%20down%20the%20sweetness%20of%20the%20%20buttercream%20frosting.%3C/p%3E%3Cp%3ESlip%20one%20end%20through%20the%20piping%20bag,%20coupler%20and%20tip%20and%20then%20cut%20off%20the%20end.%20%20Once%20you're%20finished%20with%20piping%20your%20frosting,%20simply%20remove%20the%20frosting%20by%20pulling%20out%20from%20the%20other%20end.%20Your%20piping%20bag%20is%20clean!%20%20You%20can%20easily%20switch%20frosting%20colors,%20this%20way.%20Works%20great!%3C/p%3E%3Cp%3EI%20began%20by%20piping%20a%20%22wall%20barrier%22%20around%20the%20bottom%20layer%20of%20the%20cake,%20and%20then%20spread%20a%20generous%20cup%20full%20of%20lemon%20curd.%3C/p%3E%3Cp%3EThe%20beauty%20of%20this%20cake,%20is%20that%20you%20don't%20have%20to%20be%20meticulous%20about%20how%20you%20frost%20the%20outside.%20%20Once%20frosted,%20I%20added%20toasted%20coconut%20(you%20could%20leave%20it%20untoasted,%20if%20you%20prefer).%20%20It's%20helpful%20to%20hold%20the%20cake%20over%20a%20baking%20tray,%20to%20catch%20excess%20coconut.%3C/p%3E%3Cp%3EAnytime%20that%20I%20bring%20a%20cake%20to%20a%20party%20or%20event,%20it's%20a%20given%20that%20one%20slice%20will%20be%20missing.%20%20My%20friends%20are%20used%20to%20it,%20now.%20I%20have%20to%20slice%20into%20it,%20so%20I%20can%20photograph%20it.%20Plus,%20I%20wouldn't%20want%20to%20serve%20a%20cake%20that%20isn't%20any%20good,%20would%20I?%3C/p%3E%3Cp%3EWell?%20%20Is%20this%20the%20coconut%20cake?%20%20First,%20it%20has%20a%20%20tender%20crumb%20and%20it's%20very%20moist.%20%20I%20taste%20a%20perfect%20balance%20of%20coconut,%20with%20a%20slight%20hint%20of%20vanilla.%20%20The%20frosting%20is%20sweet,%20of%20course,%20with%20notes%20of%20coconut%20and%20I%20love%20the%20chewy%20crunch%20of%20the%20toasted%20coconut%20flakes.%20%20Ah,%20the%20lemon%20curd.%20Yes,%20that's%20a%20great%20combination--%20tart%20lemon,%20sweet%20frosting,%20tender%20cake.%20%20Yep,%20I'm%20happy%20with%20this%20recipe...%20but,%20I%20don't%20dismiss%20Ina's%20nor%20America's%20Test%20Kitchen.%20%20So,%20now%20I%20you%20have%20three%20versions%20to%20choose%20from!%3C/p%3E%3Cp%3ESo%20was%20my%20friend.%20%20I%20took%20home%20a%20few%20slices,%20and%20they%20are%20individually%20wrapped%20in%20plastic%20wrap%20and%20in%20the%20freezer.%20%20When%20temptation%20calls%20me,%20to%20eat%20a%20slice,%20I%20know%20that%20I%20have%20to%20wait%20at%20least%20a%20half%20hour%20for%20it%20to%20thaw.%20%20This%20is%20a%20good%20way%20for%20me%20to%20resist%20eating%20all%20of%20it!%20%20So,%20you%20see,%20I%20can%20still%20practice%20moderation.%3C/p%3E%3Cp%3EJust%20don't%20offer%20me%20a%20plate%20full%20of%20Rice%20Krispie%20Treats.%20This%20is%20where%20I%20get%20into%20trouble.%20%20I%20can%20eat%20the%20entire%20pan,%20if%20left%20to%20my%20own%20devices.%20%20There's%20something%20about...oh,%20never%20mind.%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E){kind=link}
