Ингредиенты

  • 1/2 pound ground lamb
  • 1/2 pound ground beef
  • 3 tablespoons matzoh meal
  • 2 cloves of garlic, minced
  • 1 heaping tablespoon pine nuts
  • 1 heaping tablespoon dried currants, soaked in warm water and drained
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons of olive oil for frying
  • For the soup:
  • 1/2 small yellow onion, finely diced
  • 3 cloves of garlic, finely minced
  • 1 small carrot, finely diced
  • 2 tablespoons of olive oil
  • 1 quart plus 1 cup of chicken stock
  • 2 tablespoons of tomato paste
  • 1 cup of diced, seeded tomatoes
  • 1/2 cup zucchini, finely diced
  • A dash of ground cumin
  • 2 dashes of ground cinnamon
  • As much salt and pepper as you like
  • For the pesto-like condiment to serve on top for a hint of added glamor:
  • 1 cup gently packed parsley leaves
  • 1 cup mint leaves, treated with as much respect as you have your parsley
  • 1 clove of finely chopped/smashed/puréed garlic
  • 1/4 cup toasted pine nuts
  • 1/2 cup of extra virgin olive oil
