Everywhere I look these days I see Thanksgiving recipes, and for people like myself who like to try at least one new recipe every year, narrowing down your choices can be a challenge. I want to give you lots of options, so in this post I'm sharing ten favorite deliciously healthy green vegetable recipes I think are perfect for Thanksgiving. Every Thanksgiving dinner needs plenty of green vegetables to balance out all those less diet-friendly choices, right?
A few of these recipes are long-time favorites, so forgive the older photos but I can assure you that every recipe here is a winner. Let's start with the recipe for Broccoli Gratin with Swiss and Parmesanpictured above. Most everyone in my family would love this for a Thanksgiving veggie, and I've made it several times through the years. (Although truthfully, there are some of my brothers and sisters who would still vote for the Thanksgiving Broccoli with Cheese Sauce I used to make years ago.)
I absolutely adore this recipe for Roasted Brussels Sprouts with Balsamic, Parmesan, and Pine Nuts, even though this close-up photo style isn't my favorite any more! This is the recipe that got me to reconsider brussels sprouts, and now I love them when they're roasted or pan-fried.
The brussels sprouts recipe I'm currently swooning over is this Roasted Brussels Sprouts with Avocado and Pecans. If you like all three of those ingredients, you can't go wrong with this recipe. My family has a few brussels sprouts avoiders, but I'm going to make this for the few of us who love them.(More for us!)
This is another photo I'm not crazy about, but this recipe for Roasted Green Beans with Mushrooms, Balsamic, and Parmesan has been pinned 984,257 times with the current photo, so apparently a lot of people think these beans look good! And I promise you, you'll love this way of roasting green beans if you try it.
I've also made these Garlic-Roasted Green Beans with Shallots and Almonds several times for Thanksgiving. Don't skip the shallots because the crispy roasted shallots are what makes this special.
Another brussels sprouts favorite is this recipe for Shredded and Roasted Brussels Sprouts with Toasted Almonds and Parmesan. This was so good I ate about half of it after I took that photo!
These Lemony Green Beans are something I find myself making over and over for guests. They cook very quickly, which makes them easy for Thanksgiving.
