Ted’s family came over for Sunday Celebration AFTER Christmas Feast! I told Ted “It’s all on you, Honey!” He had the cookbooks open looking up turkey recipes, potato recipes, vegetable recipes…what a guy! I did help, doing only what I was told and trying …OH SO HARD…to keep my mouth shut in regards to suggestions. You know how hard that is for someone who loves to cook?!!!!

The lasagna was assembled and waiting to be baked. The turkey was cooking (I took care of my own Tofurky!)..now, time to chill the cranberry sauce. What?! NOT homemade????

Did Joanne do anything? Well of course. My favorite part of dinner, the desserts!

Ted’s daughter made a cheesecake the other day but wasn’t happy with the result. This is what I did with the cheesecake for which she was being WAY over critical of herself. It was good and even better in the following…

I made a white cake and baked it in a flan pan. I put the cheese cake in the middle of the flan and topped it with fresh berries: blueberries, raspberries, and strawberries. The glaze is apricot preserves, heated in the microwave and brushed on top of the fruit. Pretty snazzy isn’t it?!

1 UNBAKED 9” deep dish pie shell

Preheat oven to 425 F.

Mix the sugar, salt, spices in a small bowl. Beat eggs in a large bowl. Stir in the pumpkin and the sugar-spice. Gradually stir in evaporated milk. Pour into the pie shell.

Bake for 15 minutes at 425 F. Reduce heat to 350 F and bake for 50 more minutes. Cool on wire rack for 2 hours. Serve or refrigerate.

Now the guests:

Angela was chasing Nicholas around the house. She was always on the move so I didn’t get a shot. We also had Dave, Karen, Young David, Grace, and Gretchen as well. Unfortunately the “photographer” got sloppy and busy and neglected to take photos.

Ted was thrilled with his meal as was everyone else

We had a great time. But the star of the night and all eyes were on…well, you know who….
