%20they%20are%20a%20delicious,%20buttery,%20cardamomy%20cake%20that%20orginated%20in%20the%20Parsi,%20(Iranian)%20cafes%20in%20India%20just%20a%20tad%20over%20a%20century%20ago.%20The%20orginator%20and%20most%20famous%20purveyor%20of%20these%20treats%20was%20a%20place%20called%20B.%20Merwans%20in%20Mumbai.%3C/p%3E%3Cp%3EEarlier%20this%20year%20they%20announced%20they%20were%20closing%20up%20shop%20due%20to%20building%20renovations,%20and%20that's%20when%20the%20Mava%20hit%20the%20fan.%20Anyone%20who'd%20ever%20enjoyed%20these%20sweet%20treats%20started%20writing%20about%20them.%20Mava%20cakes%20were%20everywhere%20in%20the%20Indian%20food%20media.%3C/p%3E%3Cp%3EOnce%20I%20heard%20about%20them%20of%20course%20I%20had%20to%20try%20them.%20The%20sticking%20point%20for%20me%20seemed%20to%20be%20the%20mava%20in%20the%20mava%20cake.%20Mava,%20mawa,%20either%20way,%20is%20khoya.%20Khoya%20is%20made%20by%20cooking%20milk%20down%20slowly.%20You%20can%20make%20it%20or%20buy%20it%20in%20Indian%20markets,%20or%20as%20I've%20done%20in%20the%20past,%20use%20dense,%20full%20fat%20ricotta%20as%20a%20substitute.%20However%20if%20you've%20got%20an%20hour%20to%20spare%20and%20you'd%20like%20to%20make%20your%20own%20khoya,%20it's%20not%20very%20difficult%20at%20all,%20plus%20it%20keeps%20really%20well%20in%20the%20fridge%20or%20freezer.%20Once%20made,%20the%20mava%20is%20added%20to%20the%20batter%20which%20is%20just%20like%20any%20other%20cake%20batter%20and%20can%20be%20baked%20in%20a%20variety%20of%20sizes%20and%20shapes.%20Cupcakes,%20layer,%20whatever%20the%20heart%20desires.%20So,%20remember%20you%20can%20use%20ricotta%20as%20a%20substitute%20but%20if%20you'd%20like%20to%20try%20making%20your%20own%20mava,%20here's%20how%20to%20do%20it.%20The%20rest%20of%20the%20recipe%20follows.%3C/p%3E%3Cp%3ECardamom%20Mava%20Cakes%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EFor%20Mava%3C/p%3E%3Cp%3E2%20cans%20of%20full%20fat%20evaporated%20milk%3C/p%3E%3Cp%3E1%20cup%20of%20whipping%20cream%3C/p%3E%3Cp%3EHere's%20What%20to%20Do:%3C/p%3E%3Cp%3EPour%20the%20evaporated%20milk...%3C/p%3E%3Cp%3E...and%20whipping%20cream%20into%20a%20pot.%3C/p%3E%3Cp%3EMix%20it%20together%20well%20and%20bring%20it%20to%20a%20boil.%3C/p%3E%3Cp%3EWhen%20it's%20boiling,%20turn%20it%20down%20to%20high%20medium%20heat%20and%20cook%20for%20about%2010%20minutes,%20stirring%20to%20make%20sure%20to%20doesn't%20stick%20and%20burn.%3C/p%3E%3Cp%3EIt'll%20start%20to%20thicken.%3C/p%3E%3Cp%3ELower%20the%20heat%20to%20medium%20low%20and%20continue%20to%20stir%20it%20till%20it%20thickens%20some%20more.%3C/p%3E%3Cp%3ECook%20it%20down%20for%20another%2010%20minutes,%20till%20it%20thickens%20further.%3C/p%3E%3Cp%3ENow%20lower%20the%20heat%20to%20low%20and%20cook%20for%20about%20another%2010%20minutes%20when%20it's%20the%20thickness%20of%20thick%20pudding,%20dude,%20you've%20got%20mava!%3C/p%3E%3Cp%3EThis%20recipe%20only%20calls%20for%20using%201/2%20cup%20of%20mava%20so%20put%20what's%20left%20int%20he%20fridge%20for%20a%20short%20while%20%20or%20in%20a%20tight%20container%20in%20the%20freezer%20where%20it%20can%20safely%20stay%20for%20about%203%20months.%3C/p%3E%3Cp%3EEach%20batch%20of%20mava%20is%20good%20for%20three%20batches%20of%20cakes.%3C/p%3E%3Cp%3EThe%20Mava%20Cakes%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3ELightly%20oil%20whatever%20pan%20you're%20going%20to%20be%20using%20to%20bake%20your%20mava%20cakes%20in.%20I%20used%20silicone%20molds%20so%20no%20greasing%20required.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20mix%20together%20the%20flour,%20salt,%20and%20baking%20powder.%3C/p%3E%3Cp%3ESelect%20a%20few%20whole%20green%20cardamom%20pods.%3C/p%3E%3Cp%3ECrack%20them%20in%20the%20mortar,%20toss%20the%20husks%20and%20remove%20the%20seeds%20and%20start%20grinding%20them.%3C/p%3E%3Cp%3EWhen%20you%20have%201/4%20teaspoon%20worth,%20add%20it%20to%20the%20flour,%20salt,%20and%20baking%20powder%20mixture.%20Set%20it%20aside.%3C/p%3E%3Cp%3EUsing%20a%20stand%20mixer%20or%20a%20hand%20beater,%20add%20%20butter%20to%20a%20bowl.%3C/p%3E%3Cp%3EToss%20in%20the%20sugar...%3C/p%3E%3Cp%3E...and%201/2%20cup%20of%20mava.%3C/p%3E%3Cp%3EBeat%20%20them%20together%20at%20medium%20speed%20until%20they're%20light%20and%20fluffy.%3C/p%3E%3Cp%3ETurn%20the%20beater%20speed%20to%20low%20and%20add%20the%20eggs%20one%20at%20a%20time.%3C/p%3E%3Cp%3EMake%20sure%20each%20of%20them%20is%20completely%20mixed%20into%20the%20batter%20before%20adding%20the%20next.%3C/p%3E%3Cp%3EKeep%20the%20speed%20on%20low%20and%20add%20in%20the%20flour,%20baking%20powder,%20salt%20,%20and%20cardamom%20mixture.%3C/p%3E%3Cp%3EAs%20that's%20mixing%20together,%20add%20in%20the%206%20Tbs%20of%20milk.%3C/p%3E%3Cp%3EWhen%20you%20have%20a%20nice%20smooth%20batter,%20pour%20it%20into%20whatever%20you're%20baking%20it%20in.%3C/p%3E%3Cp%3EFill%20the%20cupcake%20cups%20or%20molds%20only%20about%20halfway%20as%20the%20
