Place the courgette slices on parchment paper, season with salt, and bake them in the oven at 230°C for 30 minutes, turning them over from time to time. When done, leave to cool.

Meanwhile, process and mix tahini paste, garlic clove and olive oil in a food processor or blender.

Add the water and blend until smooth.
4.
Place the courgettes on a platter and trickle over the tahini cream. Serve with warm pitta bread or warm tortilla pancakes cut into small triangles.
