- Saute/fry garlic, onions, and carrot in oil in saucepan till soft. Add in 2 Tb. V-8 juice.
- In food processor or possibly blender, puree garlic mix with half of beans.
- In bowl, combine remaining beans and bean puree. Add in remaining V-8 juice and green onions.
- Return to saucepan and cook, stirring, over medium-low heat till heated through, about 2 to 3 min.
- Serve over pasta. Garnish with cilantro and tomatoes.
- Note: Can befrozen.
