This is the third #SundaySupper that I am participating in, and I have to say I am loving the themes each week. This week’s event which is being hosted by Christie Campbell from A Kitchen Hoor’s Adventures is finger food. . .
Back in the olden days, all food was finger food and even so-called civilized folks ate with their hands, with perhaps just a knife for cutting meat. In many cultures around our world, not using utensils is still the norm. In Western culture, finger food usually means party fare and appetizers but the Sunday Supper event is going to challenge that. We are making finger food for DINNER. After all, according to the New York Times, even some fancy restaurants are going fork-free.
Finger foods are so much fun! They are perfect for a quick informal dinner, lunch or a snack. One of my favorite finger foods is tacos. I love spicy Mexican flavors and using lettuce for wraps is a bonus because it’s a delicious low-carb alternative. A note of caution – they can get a little bit messy. The trick is to use sturdy lettuce like romaine, bibb or green leaf and a napkin or two won’t hurt.
I like to make my own taco seasoning, it is super easy to make and tastes so much better than the pre-mixed taco seasoning. It only has five basic ingredients; chili powder, cumin, garlic powder, oregano and sea salt. Compare that to the pre-mixed taco seasoning that has a long list of ingredients AND it’s a little too salty for my taste buds. If you have left over taco seasoning from this recipe, you can store it with your spices to use later. Sprinkle on chicken, pork or beef before grilling or into some eggs at breakfast.
These tacos come together quickly. You can use any kind of ground meat, I chose chicken this time, but pork, beef or turkey will work too. Once the meat is seasoned and browned with onions, jalapeno peppers and beans it is stuffed into the lettuce wraps and topped off with your favorite fixins.

FOR THE SEASONING 1½ tablespoons chili powder 1 tablespoon garlic powder 2 teaspoons ground cumin ¼ teaspoon dried oregano 1 teaspoon sea salt 1 tablespoon avocado oil 1 pound organic ground chicken ¼ cup diced onion 1 cup organic black beans 1 jalapeno pepper chopped - optional sturdy lettuce leaves, romaine, Boston, or dark green work best Instructions
