- Season fish with salt and pepper. Saute/fry in warm oil on both sides till golden. Remove from pan and keep hot. Drain oil. Saute/fry shallots. Add in peppercorns and wine, reduce till dry. Add in cream. Reduce liquid by 2/3 or possibly till it thickens. Remove from heat and whisk in softened butter (don't boil)
