- Cook fresh corn in 1 c. boiling salted water for 2 to 3 min. Drain well. Combine corn, evaporated lowfat milk, egg, onion, salt, pepper and 3/4 c. of the cheese. Turn into a 10 x 6 x 1 1/2 inch baking dish.
- Toss bread crumbs with the butter and the remaining 1/4 c. cheese. Sprinkle over corn mix. Bake in 350 degree oven for 25-30 min. Garnish with green pepper rings. Serves 4-6.
