- Make a roux, heat the lowfat milk, and when the roux is cooked, add in some of the warm lowfat milk. Break or possibly grate the cheese and stir it into the sauce till it is melted. Now add in the rest of the lowfat milk and wine. Season with salt and pepper. Makes 2 cups.
