When I think of fall foods, one of the first ones the come to mind are sweetpotatoes. Even though California sweetpotatoes are available all year; the orange flesh reminds me of fall. I didn’t forget to press the space bar, I deliberately left out the space between sweet and potato. That’s because the California Sweetpotato Council wants consumers to understand that California sweetpotatoes are not your typical sweetpotato, they are an entirely different vegetable, and a tasty one at that.

The California sweetpotatoes are grown in soft sand and are hand sorted during harvest to minimize scarring and scratching. They are not to be confused with yams which are dry and starchy, and are not readily available in the United States. In contrast, California sweetpotatoes are sweet and moist and as I mentioned previously, they are available year round, which is good news for a sweetpotato lover like me. Sweetpotatoes are nutrition powerhouse too; one medium cooked sweetpotato contains 4 grams of fiber, 2 grams of protein. They are a good source of vitamin C and more than a day’s worth of vitamin A, and all of that for 105 calories per serving!

There are so many ways to eat sweetpotatoes ; one of my favorites is just plain and baked in the oven. These delicious vegetables don’t need a lot of fancy ingredients to enhance their flavor, they do fine all by themselves! However, if you are looking for new and creative ways with sweetpotatoes, I’m sure you will find several delicious recipes from me and other contestants below.

Sweetpotato Lentil Cakes [Recipe Redux]

INGREDIENTS

INSTRUCTIONS

Spread the California sweetpotatoes on a baking sheet lined with parchment paper drizzle with one tablespoon of olive oil

Roast in 375 oven for about 15 to 20 minutes or until soft

Once California sweetpotatoes begin to soften, drizzle with maple syrup and return to oven for 8 minutes

Remove from oven and let cool

Mash the California sweetpotatoes with potato masher, mix in cooked lentils and walnuts

Shape the California sweetpotato mixture into patties

Heat one tablespoon of olive oil in a skillet over medium heat, when hot add the cakes and cook until they begin to brown, flip and brown on the other side.
