Mmm, I just love sweet and sour chicken, however, it’s a killer on the figure! All that breading and frying is good once in a great while, but when you can cut that part out of the equation, wa-la, you can have sweet and sour chicken any day of the week…

Preheat oven to 425 degrees. Season chicken with salt and pepper. Dredge the chicken in egg then in the cornstarch, let sit for a few minutes while the oil is coming up to temperature in a pan. Fry the chicken to golden-it doesn’t need to be cooked through at this point. Place on a baking sheet on top of a silpat liner. In a small bowl, mix the sugar, ketchup, vinegar, soy sauce and garlic powder together and pour half over the chicken. Bake for about 45 minutes, turning the chicken every 15 minutes to coat.

While the chicken is baking, saute the vegetables in a little oil over high heat. Simmer the remaining sauce and then pour over the cooked vegetables. When the chicken is done, mix all together and serve over cooked rice.
