- Preheat the oven to 350 degrees F.
- In a large bowl, mash the sweet potatoes with a whisk or potato masher.
- Combine them with the eggs, butter, milk, brown and white sugars, cinnamon, vanilla, and nutmeg.
- Prepare topping: Crush cornflakes into small pieces. In a mixing bowl, combine them with sugar, butter, and pecans, and mix well. Top the souffle with this mixture before baking.
- Transfer to a 9 by 12-inch casserole dish. Top with pecan topping and bake for 25 to 30 minutes.
